A potager is an ornamental kitchen garden designed to grow food for the household. Vegetables, herbs, fruit and flowers share a space arranged for both usefulness and visual appeal. It can be a few accessible beds beside a home or a more formal garden with paths and trellises; it does not need to be large or elaborate to count.
What makes a garden a potager?
The defining idea is the combination of food production and design. The University of Florida IFAS Extension defines a potager as “An ornamental kitchen garden.” Iowa State University Extension describes designs that may use geometric beds, paths, decorative edging and trellises, while noting that patterns need not be formal. An informal mix of useful plants can work just as well.
Choose crops not only for what you like to eat but also for their color and texture. Different leaf shapes, edible flowers and a trellis for climbing plants can make a productive plot feel composed. Flowers that share the vegetables’ growing conditions can add color and attract pollinators and beneficial insects; that does not mean every flower benefits every crop or reliably controls pests.
Plan around your site and what you eat
Before building beds or buying vegetable garden seeds, measure the space and note sunlight, existing soil, water access and the room needed for paths. Think about which foods your household actually enjoys, how often you want to tend the garden, and whether the location makes watering and harvesting convenient. The RHS recommends choosing what to grow in light of available space, climate and taste.

At least six hours of full sun a day, preferably more, is the guidance in University of Maryland Extension’s 2026 startup and planning pages. That is regional advice, not a universal rule for every location or crop. Check local horticultural or extension guidance for planting dates and suitable varieties, and account for the light needs of the crops you choose.
A modest beginning is often easier to manage. University of Maryland Extension suggests 50–75 square feet as one possible starter vegetable garden size for its audience; it is not a minimum or a requirement elsewhere. Its guide names bush beans, tomatoes, cucumbers, peppers, lettuce, summer squash and leafy greens among crops that are easy to grow for that audience. Match your first selection to local conditions and your own meals rather than treating that list as a universal planting plan.

Choose beds that suit the space
In-ground beds, raised beds and containers can all grow edibles. Compare them by available room, sunlight, soil and drainage, access, and the work and materials needed to set them up. There is no one format that fits every site.

For food gardening, soil safety matters as well as fertility. Test in-ground soil when appropriate and use compost to improve it. Maryland Extension discusses a lead measure of less than 400 parts per million in the context of growing food in Maryland. That figure is jurisdiction-specific guidance, not a universal standard; consult local authorities or soil-testing guidance for your area.

Lay out paths, light and crops before planting
Sketch the footprint first. Mark the beds, paths, water access and likely shadows, then arrange plants so the space remains reachable for planting, weeding and harvest. A lush, dense design may shade soil, but crowding can also hinder access and increase disease risk. Leave enough room for the mature plants and for you to work among them.
In its planning recommendations, Maryland Extension suggests placing taller crops on the north and west sides and grouping crops by season. Treat this as a starting point rather than a fixed formula: latitude, bed orientation and the height of neighboring plants affect where shadows fall. Put climbing crops on supports where suitable, and position shorter crops so they are not needlessly shaded.

Paths are part of the garden’s function, not wasted growing area. Iowa State Extension notes that paths and ornamental edging can contribute to a potager’s structure, while trellises and archways add height and support climbers. Make sure the layout still allows you to reach each crop and carry water or harvested produce through the garden.

Plan more than one use for a bed where the local growing season allows it. Group crops by season, and consider planting a later crop after an early one has finished. This succession can keep space in use without packing every bed too tightly at the start.

Choose varieties and planting times using local guidance. A garden calendar from one region may not fit another, and conditions can vary even within a region. Use your local extension service or horticultural authority for sowing dates, variety selection and soil-testing recommendations.
Start with a garden you can maintain
A successful first potager is one you can water, reach and harvest. Begin with the crops you are most likely to eat, provide workable paths and supports, and add more beds or ornamental details as you learn what grows well in your conditions. The design can be formal or informal; the practical test is whether it makes growing food enjoyable and manageable.
