To get started, choose a trustworthy recipe for the specific food, prepare the food in a cooking-rated bag, bring the bath to the recipe’s target temperature, and cook for its specified time. An immersion circulator, suitable bags and a pot or other water-bath vessel are the basic setup; a vacuum sealer is one packaging option, not an established requirement for every method.
What you need to get started
- An immersion circulator: It heats and circulates the water to maintain the bath temperature. See the process described by Anova Culinary Support.
- Cooking-rated bags or pouches: Use food-grade bags or pouches specified as suitable for cooking. Do not assume that any plastic bag is appropriate for a hot-water bath. Breville Commercial’s FAQ describes cooking in a food-grade pouch.
- A water-bath vessel: A stockpot is one example. A dedicated container is optional if you already have a suitable vessel.
A vacuum sealer can be useful, but the sources describe different packaging approaches: Breville discusses vacuum sealing, while Anova describes removing air from food-grade bags. That difference does not establish a vacuum sealer as mandatory for every home setup.
How to cook sous vide
- Choose a food-specific recipe. Find instructions for the food and preparation you are making, including both temperature and time. These two values work together; do not substitute one universal setting for all foods. Food type and thickness affect the instructions. Breville’s FAQ discusses the method, and Macau Municipal Affairs Bureau guidance likewise emphasizes following recipe-specified time and temperature.
- Prepare and package the food. Season or otherwise prepare it as the recipe directs, then place it in a cooking-rated bag or pouch. Remove surrounding air using the packaging method you have chosen.
- Set up the bath. Attach the circulator to a suitable vessel, add water as directed by the device, and heat it to the recipe’s target before adding the food. Leave enough room for water to circulate around the pouch.
- Submerge and cook. Put the packaged food in the bath and keep it submerged, following the recipe and circulator instructions. Cook for the specified time rather than treating the target temperature alone as a complete instruction.
- Finish if desired. Some foods benefit from a quick sear or smoke after the bath, especially when you want a browned surface. It is a finishing choice, not a step that every dish requires. Anova and Breville both describe finishing as applicable to some foods.
- Serve or store leftovers safely. Handle cooked food cleanly and refrigerate perishables promptly. USDA FSIS provides general U.S. advice on safe food handling. If cooling food for later storage, follow appropriate food-safety guidance for your location and the recipe; there is no universal sous vide leftover shelf life established here.
Why time and temperature need a reliable recipe
Sous vide is not simply “cook at a low temperature.” The recipe’s time-and-temperature combination is the instruction to follow, and food type and thickness matter. The sources cited here do not provide a complete validated schedule for every ingredient and preparation, so avoid extrapolating a setting from a different food.
U.S. consumer charts from FoodSafety.gov cover food-specific minimum temperatures and storage, but ordinary minimum internal-temperature charts are not a complete sous vide time-and-temperature schedule. General safe-handling advice remains important: use clean practices, prevent cross-contamination, cook according to appropriate instructions, and chill or refrigerate promptly.

Common beginner mistakes to avoid
- Using any plastic bag: Choose packaging identified as suitable for cooking.
- Following a temperature without a time: Use a recipe that specifies both values for the food and preparation.
- Packing the bath too tightly: Leave space for water circulation and keep the food submerged, as emphasized in the Macau guidance.
- Assuming long cooking cannot affect texture: Prolonged cooking can change texture. Use the recipe’s specified time rather than assuming the bath makes overcooking impossible.
- Keeping cooked food out indefinitely: Apply prompt, appropriate chilling or refrigeration and safe handling practices. Macau’s official guidance includes cooling procedures for its own context; its thresholds should not be treated as universal home-cooking rules.
