Set a home freezer to 0°F (-18°C) or colder. That is the target given by the U.S. Food and Drug Administration (FDA) and USDA Food Safety and Inspection Service (FSIS). A freezer thermometer—not just the appliance dial—confirms whether the compartment is actually holding that temperature.
Why 0°F (-18°C) is the correct target
FDA consumer guidance says a freezer should be 0°F (-18°C), while USDA FSIS identifies 0°F (-17.8°C) as the setting for best-quality frozen food. Setting the control slightly colder is acceptable, provided food remains solidly frozen and the appliance is operating normally.
At a constant 0°F, food remains safe indefinitely from a food-safety standpoint. The practical limits printed on storage charts are mainly quality limits: flavor, texture, color and nutritional quality gradually decline even when the food remains safe.
How to check the real freezer temperature
A control dial often indicates a cooling setting rather than the air temperature around your food. Verify it with an appliance thermometer.

- Place the thermometer between frozen packages, where it is less affected by brief air swings when the door opens.
- Leave it undisturbed for 5–8 hours, following USDA guidance for a meaningful reading.
- Adjust the freezer control if the thermometer is not approximately 0–2°F.
- Keep the thermometer in the freezer for an ongoing check, including during a power outage.
If the compartment repeatedly stays warmer than 0°F despite the control being set colder, check the door seal, overloading, blocked air vents and frost buildup. A service call or replacement may be necessary if the appliance cannot maintain the target.
Temperature, safety and freezer burn are different issues
Freezing pauses microbial growth
Freezing inactivates bacteria, yeasts and molds; it does not reliably destroy them. When food thaws, surviving microorganisms can become active and multiply. Handle thawed food as a perishable item and follow normal refrigerator, cooking and reheating practices.

Freezer burn affects quality
Freezer burn is dehydration and oxidation caused by air exposure. It is not a food-safety hazard, although it can leave dry, gray-brown areas and a stale taste. Airtight freezer-safe bags or containers, with excess air removed, reduce the problem.
What if your freezer cannot hold 0°F?
Some combination refrigerator-freezers fluctuate above 0°F, especially when heavily loaded or frequently opened. They can still be useful for shorter-term frozen storage, but do not treat them as equivalent to a freezer that continuously maintains 0°F for long-term storage. Verify performance with a thermometer rather than relying on the appliance label.

Power-outage procedure
While the power is off
- Keep the door closed. Opening it repeatedly releases the cold air that protects the food.
- A full, unopened freezer generally maintains an adequate temperature for about 48 hours, according to FDA consumer outage guidance. A partly full freezer usually warms sooner.
- For emergency cooling, FDA notes that 50 pounds of dry ice can keep an 18-cubic-foot full freezer cold for two days. Use dry ice only with appropriate ventilation and handling precautions.
After power returns
Food may be refrozen when it still contains ice crystals or when its temperature is 40°F or below. Quality may suffer after partial thawing, so separate safety decisions from quality decisions. If food has warmed above 40°F for an uncertain period, use FDA food-outage assessment guidance and discard items when safety cannot be established.
A simple maintenance routine
- Read the appliance thermometer regularly and after any power interruption.
- Keep packages arranged so cold air can circulate; do not block interior vents.
- Check that the gasket seals evenly and that the door closes completely.
- Label and date packages, and use older items first to preserve quality.
- Package foods tightly in freezer-safe materials to limit air exposure.
Frequently Asked Questions
Is 0°F the same as -18°C?
They are effectively the same household target: 0°F equals approximately -17.8°C, commonly rounded to -18°C.

Can food become unsafe simply because it has been frozen for a long time?
Not when it has remained continuously at 0°F or below; the main change over extended storage is loss of quality.
