What the Misen Carbon Nonstick skillet is
Misen describes the skillet as a three-ply construction: nitrided carbon steel on the outside with an aluminum core. The company says the core is intended to improve heat response and reduce weight compared with traditional carbon steel or cast iron. That is the maker’s design explanation, not an independently verified performance result.
The 8-inch listing specifies 15.25 inches total length, a 6.75-inch handle, an 8.5-inch overall diameter, a 7-inch cooking-surface diameter, a 1.34-inch height, a 1.70-pound weight, a 2.5 mm base, and 2.1 mm walls. It lists the country of production as PRC. Misen also lists induction compatibility, metal-utensil use, hand washing, and a maximum pan heat rating of 1100°F / 593°C. These specifications belong to that listing; other sizes and deeper variants may differ.
Is it truly nonstick?
Misen says the nitrided cooking surface has no conventional ceramic or PTFE coating and can develop seasoning through use. The company acknowledges that conventional coated cookware may be more nonstick at first. Its product-page answer is, “At first, no. But soon, yes.” That is a marketing claim about expected performance, not a controlled comparative test.

Owner experiences are mixed. In one r/carbonsteel discussion, a user reported mild sticking with eggs and fish and said the pan did not replace their nonstick skillet; the user later reported better results at lower heat. Other commenters disagreed about expectations and technique. A single community thread cannot establish typical performance, but it illustrates why heat management and cooking fat matter.
What Misen says about PFAS, PTFE, and PFOA
Misen markets the pan as free of PFAS, PTFE, and PFOA, and describes it as coating-free. These are the manufacturer’s statements. The available evidence did not establish independent compositional testing or an authoritative toxicology assessment for this exact model, so those claims should not be expanded into a blanket guarantee that the pan is risk-free or independently certified.

How to use and care for it
Misen’s recommendations are straightforward, but they differ from treating the pan like a disposable-style nonstick surface:
- Preheat the pan for 1–2 minutes, as Misen recommends.
- Use roughly ½–1 tablespoon of oil while cooking.
- Hand wash the skillet, then dry it thoroughly.
- Condition it occasionally, following Misen’s care directions.
Misen says the surface does not need a lengthy initial seasoning ritual and that cooking fats can build seasoning gradually. A Reddit post reproducing a response attributed to Misen CEO Michael says deliberately seasoning the pan can make it stickier, “just like over seasoning a carbon steel pan.” That is a time-specific, user-reposted email, not a current verified specification, so it is not a substitute for the care guidance supplied with the exact pan.

Can it replace a Teflon skillet?
Not if your priority is the familiar, dependable release of a new PTFE-coated pan with minimal technique adjustment. Misen itself says traditional coated cookware may work better initially. Carbon Nonstick may suit someone willing to preheat, use oil, manage heat, and maintain the surface; the available user reports show that results and expectations vary. There is no controlled independent comparison establishing that it matches a PTFE pan for food release.

The retrieved 8-inch listing showed a price of $109, a 60-day test drive, free returns, and a lifetime warranty against defects. These are seller terms that can change and may depend on location or exclusions; check the live listing and warranty terms before purchase. Misen also lists a compatible glass lid for some sizes. Confirm that a lid matches the specific skillet diameter: the 10-inch lid listing says the glass lid is oven safe to 450°F / 230°C and dishwasher safe. Do not apply the lid’s temperature rating to the skillet or assume all sizes include a lid.
