Where should you store whole lemons?
On the counter if you’ll use them soon
Citrus can be kept at room temperature, according to Health Canada’s fruit and vegetable storage guidance. Utah State University Extension estimates whole lemons keep for about two weeks at room temperature. Actual freshness varies with the fruit and storage conditions.
In the refrigerator to keep them longer
Put whole lemons in a standard food storage bag and refrigerate them. Health Canada says refrigeration extends citrus shelf life, and Utah State University Extension estimates about six weeks for lemons stored in a plastic bag in the refrigerator. A specialty produce-preservation bag or particular brand is not necessary to follow that guidance.
How should you store a cut lemon?
Refrigerate a cut lemon and use it as quickly as possible. The available guidance does not establish an exact lemon-specific safe-use period after cutting, so avoid treating any particular number of days as a guarantee. FDA guidance says to refrigerate pre-cut or packaged produce and keep the refrigerator at or below 40 °F (4 °C).

Wash lemons before cutting or zesting
Rinse the peel under running water before cutting or zesting, even if you do not plan to eat it. Do not wash produce with soap or household cleaning products. Health Canada advises against using cleaning products on fruits and vegetables; the FDA’s produce-handling guidance provides additional safe-handling recommendations.
Why commercial lemon-storage figures don’t apply at home
Commercial postharvest storage uses controlled conditions that are different from a household refrigerator. The USDA Agricultural Research Service describes a commercial storage range of 45–54 °F (7–12 °C), depending on maturity and other factors, and says suitable controlled conditions can allow storage for up to six months. Those figures are not a household guarantee. The same reference notes lemons can be chilling-sensitive during prolonged storage below 50 °F (10 °C), while some receiving situations tolerate 37–41 °F (3–5 °C) for three to four weeks. This technical context is not a reason to set a home refrigerator warmer than food-safety recommendations.
