You can leave them on the plant to dry or cut them and finish drying indoors; the latter protects more seed from birds and bad weather. Once dry, remove the seeds and decide whether to roast them for food or store them for planting.
When are sunflower seeds ready to harvest?
Use several signs together rather than relying on one color: the head droops, its back shifts from green toward yellow or yellow-brown, the central florets dry or rub away, and the seeds feel full. Check a few seeds to make sure they have filled out. A brownish tinge on the seed can also indicate maturity, but cultivar and stage affect color. Should you dry the head on the plant or indoors?

For indoor drying, cut the stem with about a foot attached so you can hang the head. Alternatively, place it in a paper sack or cover it with breathable cheesecloth to catch loose seeds. Keep it somewhere warm, dry, and well ventilated, protected from rodents and insects. University of Georgia recommends curing heads for several weeks; Iowa State says a couple of weeks may be enough. Actual drying time depends on the head and conditions, so check that it is thoroughly dry before removing the seed. See UGA’s home-garden guidance and Iowa State’s seed-harvesting advice.
How to remove and dry the seeds
- Wait until the head is thoroughly dry. Damp seed is not ready to store.
- Rub two heads together over a clean container, or brush the disk with your fingers or a stiff brush to loosen the seeds.
- Spread the seeds out in a dry place for a few more days before eating or storing them.
University of Georgia recommends placing food seed in airtight glass jars in the refrigerator after this additional drying to help retain flavor. For seed you intend to plant, follow the separate storage guidance below. See UGA Cooperative Extension.

How to roast sunflower seeds for snacking
Start with dry seed. Oregon State University Extension recommends rinsing it, letting it dry, then seasoning and roasting. Two extension recipes offer different approaches; choose one rather than combining their times and steps.
Plain roasted seeds
Colorado State University gives a roasting method of 300°F for 15–25 minutes. Check the seeds as they roast and stop when they are browned and done to your liking. See Colorado State’s recipe.

Salted seeds
For salted seeds, Colorado State describes soaking them in salt water before a longer, low-temperature roasting step. Oklahoma State University Extension describes soaking or simmering the seeds in salted water, then roasting at 300°F for 30–40 minutes and stirring occasionally. Follow the complete method you choose, and check for browning and doneness rather than treating the time as exact: seed size and oven performance vary. How to save sunflower seeds for planting next year
Choose seeds from healthy plants with traits you want to grow again. Let the seed dry fully, then store it in a cool, dry, dark place. Before sowing, test germination rather than assuming every seed will sprout. Iowa State Extension describes sunflowers as an easy flower for seed saving and recommends open-pollinated, self-pollinated annuals as a good starting point. Seed longevity depends on how mature the seed was and how it was stored, so a stated maximum is not a guarantee for an individual batch. Oklahoma State gives seven years as a broad possible viability period under cool, dry, dark storage, not a promise that any saved lot will remain viable that long. A germination test gives a more useful check for the seed you actually have.

For snacks, rinse, dry, season if desired, and roast the harvested seed. For planting, keep a separate batch fully dry and store it cool, dry, and dark; test its germination before sowing. Food preparation and seed-saving storage have different aims, so label separate containers when you put the seed away.
