Growing Rosemary: Sun, Water, Pruning, Varieties, and More

Rosemary thrives in full sun and sharply drained soil. Learn when to water, how to prune without cutting into bare wood, which varieties suit pots or hedges, and how to harvest and store sprigs.

Rosemary grows best in full sun and sharply free-draining soil. Once established in the ground, it usually needs little extra water; the main risks are persistently wet soil and severe pruning into bare, woody stems. Choose upright varieties for shrubs and hedges, or trailing forms for pots, walls, and ground cover.

Choose a sunny site with fast drainage

Rosemary, Salvia rosmarinus (formerly Rosmarinus officinalis), is an evergreen herb that does best in the sunniest available spot, with good air movement and soil that drains freely. The Royal Horticultural Society describes it as easy to grow once established in a warm, sunny, free-draining site (RHS growing guide); the University of Delaware also recommends full sun and loose, well-drained soil (University of Delaware).

In the ground

Avoid dense, water-retentive soil. If a site stays wet after rain, improve drainage or choose a better-drained location rather than trying to compensate with a watering schedule.

In a container

Use a pot with drainage holes and an open, well-draining herb medium. Check that the hole is not blocked; if the mix stays wet, move the plant into a more open medium. Pots dry faster than garden soil, so check them more often, but do not keep the roots continually damp.

How to water and feed rosemary

Water newly planted rosemary during dry spells in its first year while it establishes. After that, in-ground plants generally need little supplemental water: let the soil dry between waterings. Container plants need more frequent checks because their mix dries faster, but water only when the soil has begun to dry rather than following a fixed weekly calendar.

Persistent wetness, yellowing, wilting, or general decline can point to poor drainage or root disease, not thirst. Inspect the soil and drainage before adding water. The care guidance emphasizes site and drainage over heavy feeding; no universal fertilizer schedule is established by the cited sources.

Pick a variety for its shape and location

Rosemary cultivars vary in size, shape, flower color, scent, and flavor. Match the mature habit to the space and intended use, and account for local winter conditions.

For broader context, UC Davis Extension gives an approximate range of 1.5–6 feet tall and 2–5 feet wide, depending on variety and climate (UC Davis Extension). These ranges are not guarantees for a particular plant; check the cultivar’s expected mature size and local performance before placing it near a path, wall, or boundary.

Prune lightly to keep plants compact

Trim lightly after flowering to maintain a dense shape, and harvest by snipping green, leafy shoots. Avoid cutting deeply into old, leafless wood: rosemary often does not resprout reliably from severe cuts. If an established plant is bare and straggly, take cuttings from healthy green growth and replace the old plant instead of attempting a hard renovation cut.

Propagate from cuttings for a quicker start

For most home growers, a live starter plant or a cutting from a vigorous plant is more practical than seed. UW Extension recommends taking 4–6 inch tip cuttings from flower-free shoots in late spring to early summer (UW Extension).

Seed is possible, but germination is irregular and slow; plants may take up to three years to reach a useful harvest size, according to UW Extension. A cutting is therefore the more predictable route when you want a plant with the characteristics of its parent.

Grow rosemary in pots and protect it in winter

A container makes it easier to move rosemary into shelter when winters in your area are too cold or wet. Keep it in the brightest available position, preserve good drainage, and reduce watering when growth slows. Winter survival varies with cultivar and local climate, so use a form known to do well locally or overwinter the pot under protection; a single hardiness threshold does not apply everywhere.

Indoor rosemary can struggle when light and airflow are low or its potting mix stays wet. If growth is poor, improve direct light and air movement, and check drainage before increasing water or feeding.

Harvest and store rosemary

Rosemary can be harvested year-round. For the best flavor, the RHS recommends the soft new growth in late spring and summer. Snip sprigs as needed. To dry them, hang sprigs in a warm, dark, well-ventilated place. Once fully dry, strip off the leaves and store them in an airtight jar.

Troubleshoot common problems

  • Yellowing, wilting, or sudden decline: Check whether the soil is staying wet, whether the pot drains freely, and how often you are watering. Wet conditions can lead to root disease.
  • Leggy or woody growth: Use light trimming on green growth after flowering. Do not cut back into bare old wood; replace severely bare plants with rooted cuttings.
  • Poor growth indoors: Provide more direct light and airflow, and make sure the growing medium drains rather than remaining persistently wet.
  • Cold damage: Shelter container plants and choose cultivars suited to the local climate.
