Types of Field Peas: How to Tell Garden, Snow, Snap and Southern Peas Apart

Field pea can mean dry-seed Pisum sativum or a southern pea. Learn how species, harvest stage and whether the pod is eaten distinguish the main types.

“Field pea” can refer to two different crops: a dry-seed form of the cool-season pea, Pisum sativum, or a warm-season southern pea, Vigna unguiculata. For fresh eating, the familiar types of true peas are shelling (garden) peas, snow peas and snap peas. The key differences are the species, whether the pod is eaten, and when it is harvested.

What does “field pea” mean?

The name is ambiguous, so check the botanical name or intended use rather than assuming every field pea is the same crop. USDA NRCS lists “field pea” among common names for Pisum sativum, while Texas A&M AgriLife Extension uses the term among names for southern peas, or Vigna unguiculata.

For Pisum sativum, “field pea” often describes a crop grown for mature, dry seed or other agricultural uses, rather than the tender green peas sold for fresh eating. Southern peas are a separate species, also called cowpeas. Black-eyed peas belong to this southern-pea group, not to Pisum sativum.

USDA NRCS describes Pisum sativum as an annual cool-season grain legume. It can be grown for dry seed, forage, hay, silage, green manure or cover crops; its seeds can be used for human food, livestock feed or processing. The intended use influences when the crop is harvested: tender green peas are picked immature, while dry field peas remain until the seed matures and dries. How the main types of true peas differ

The three common fresh-eating types are all Pisum sativum. Their practical difference is what you eat: shelling peas are grown for the seeds, while snow and snap peas are eaten as pods. Iowa State University Extension uses this distinction in its comparison of the types. Iowa State University Extension: “How do the various types of peas differ?”

Type Harvest cue How it is eaten
Garden, English or shelling pea Pick when pods are filled and the seeds are tender. Remove the seeds from the pod and eat them; the garden-pea pod is not eaten.
Snow pea Pick while the pod is long, thin and flat, with seeds just beginning to form. Eat the tender pod whole, commonly steamed or stir-fried.
Snap or sugar snap pea Pick when seeds are nearly full size and the pod is thick, fleshy and crisp. Eat the pod and seeds together, raw or cooked; the peas can also be shelled.

Garden or English peas

These are the classic shelling peas. Harvest when the pods are plump with filled-out seeds, before the peas lose their tenderness. Open the pod and eat the seeds; unlike edible-podded types, the pod is generally discarded.

Snow peas

Snow peas are harvested young, while their pods are flat and the seeds are only just developing. Their thin, tender pods are eaten whole. Leaving them to swell changes their texture and takes them past the usual snow-pea harvest stage.

Snap peas

Snap peas are harvested later than snow peas. Wait until the seeds are nearly full size and the pods are fleshy and crisp, then eat the whole pod and seeds. They can also be shelled, but their defining feature is that the pod is edible.

Southern peas: black-eyed, cream, crowder and purple hull

Southern peas are Vigna unguiculata, not another variety of Pisum sativum. Texas A&M AgriLife Extension characterizes them as hot-weather legumes grown in summer. Common groups include black-eyed, cream, crowder and purple-hull peas. Texas A&M AgriLife Extension: Easy Gardening: Southern Peas (January 2023)

For fresh use, pick pods when the peas are fully developed but still green, then shell them. For dry use, leave pods on the plant until they dry. Southern pea plants may be bush, vining or semi-vining; the growth form varies with the cultivar. University of Maryland Extension notes that a fresh pod may contain 20 or more peas, but that is a general observation, not a promised count or yield. How growing conditions differ

True peas and dry field peas

Pisum sativum is a cool-season crop and does not grow well in hot weather. A USDA NRCS-hosted Illinois Grazing Manual fact sheet gives 60–70°F as the optimal temperature range for field peas; that is agronomic guidance for the crop, not a universal planting-date rule for every location. The same fact sheet advises avoiding poorly drained soils and notes that properly inoculated field peas can fix most of their nitrogen requirement. It describes normal-leaf and semi-leafless growth forms, with cereal mixtures sometimes used to support vines for grazing or silage. USDA NRCS-hosted Illinois Grazing Manual: Field Peas for Forage

Southern peas

Southern peas need warm conditions. Texas A&M’s guide recommends planting well after the last frost and cautions that the crop cannot tolerate frost, freezes or cool temperatures. Its calendar guidance is written for Texas, so use local climate and extension advice rather than applying Texas planting months elsewhere. The guide lists a preferred soil pH of 6.0–7.0, also as crop guidance rather than a substitute for a local soil test.

Which type should you choose?

  • Choose garden or shelling peas if you want tender green seeds and do not plan to eat the pods.
  • Choose snow peas if you want a tender, flat pod to eat whole while the seeds are small.
  • Choose snap peas if you want a fleshy, crisp pod and developed seeds that can be eaten together.
  • Choose southern peas if you want a warm-season cowpea such as a black-eyed, cream, crowder or purple-hull type.
  • Look for dry field peas when the goal is mature seed, feed, forage or cover-crop use rather than fresh edible pods.

For growing, select a cultivar suited to your region, season and purpose. The extension sources identify types and examples but do not establish one best cultivar for every location; consult a local extension service or seed supplier and check that the packet names the species and intended use.
