10 Vegetables to Start Indoors in February—If Your Region’s Schedule Allows

February seed starting is regional: onions, leeks, and celery suit some cold-climate calendars, while milder schedules may include brassicas, greens, tomatoes, peppers, and eggplant.

Onions, leeks, and celery are reliable February seed-starting candidates in some cold-climate calendars. In milder regions, broccoli, kale, lettuce, tomatoes, peppers, and eggplant may also be started indoors or under protection. February is not a universal start date: use your local frost-free date, the crop’s transplant timing, and your seed packet to decide what fits your garden.

Which vegetables can you start indoors in February?

The right list depends on where you garden. University of Minnesota Extension places onions and leeks in early February and celery in mid-February on its Minnesota calendar. University of Illinois Extension’s 2023 schedule for central Illinois also lists onions, leeks, and celery in February. Those are the clearest examples that overlap in both calendars.

In the Willamette Valley, Oregon State University Extension’s calendar includes a broader range of February indoor or protected starts: broccoli, kale, greens, lettuce, tomatoes, peppers, and eggplants. That schedule reflects local conditions and should not be applied automatically to other parts of Oregon or the country.

Eggplants February in the Willamette Valley Use local frost and transplant guidance rather than treating February as a universal date.

Broccoli, cabbage, cauliflower, Brussels sprouts, and head lettuce are not February starts in the Minnesota schedule: Minnesota Extension places them in early March. Central Illinois similarly puts broccoli, cabbage, cauliflower, kale, and lettuce in early-to-mid-March. A crop belongs on a February list only where a local schedule supports that timing.

How to decide whether February is right for your garden

Work backward from your local frost-free date

Start with the average frost-free date for your location, then find the crop’s recommended interval between indoor sowing and transplanting. Oregon State University Extension’s central Oregon schedule explains this approach: enter your own average frost-free date, use the crop-specific set-out timing, and count backward by the indoor growing interval. Its example uses May 31 for most central Oregon gardeners; that date is not a general U.S. planting date.

Adjust for your part of the region

University of Illinois Extension says its general calendar is for central Illinois. For northern Illinois, start about two weeks later; for southern Illinois, about two weeks earlier. Other regions need their own local guidance, not an automatic application of those adjustments.

Check the seed packet

Packets provide crop-specific information such as whether to sow indoors or outdoors, when to start, planting depth, expected germination time, and soil-temperature requirements. Minnesota Extension advises: “Follow seed packet or catalog instructions, as each species has its own requirements.” Use the packet alongside a local extension calendar, especially when choosing a variety.

What you need to start seeds indoors

  • Containers with drainage: Use divided cells for most crops, with a drainage hole in each cell. Onions and leeks can instead be grown together in a larger flat.
  • A tray: Set containers in a tray to catch excess water.
  • Seed-starting mix: Use a sterile, light mix intended for starting seeds.
  • Labels: Mark the crop and variety so seedlings remain identifiable.
  • Light and warmth: Early sowing can require supplemental light and bottom heat. Oregon State notes that most seeds sown under protection in January and February need both. Minnesota Extension also notes that close artificial lighting can help in low-light conditions and mentions seed-starting heat mats. These are practical considerations for early starts, not a universal equipment mandate.

How to sow seeds and care for seedlings

  1. Prepare the mix. Moisten seed-starting mix before filling containers, following University of Illinois Extension’s basic setup guidance.
  2. Sow at the packet’s depth. Seed-covering needs differ by crop, so follow the packet rather than burying every seed the same way.
  3. Keep the mix moist, not waterlogged. Check containers regularly and avoid overwatering.
  4. Use a humidity cover only until sprouting. Remove it once seedlings emerge.
  5. Provide adequate light. In low-light conditions, place artificial light close to seedlings; early indoor sowing may need supplemental lighting.
  6. Transplant according to the crop and local schedule. Do not use one crop’s container method or timing as a rule for every vegetable.
