If you have baking powder, use 3 teaspoons for every 1 teaspoon of baking soda the recipe calls for. It is the most practical substitute, but it is not an exact swap: the result may be cakier or taste different. Why baking soda and baking powder are different
Baking soda is sodium bicarbonate. It needs an acidic ingredient—such as buttermilk, yogurt, vinegar, lemon juice, brown sugar, or natural cocoa—to react and produce carbon dioxide that helps a bake rise. It also affects browning, spread, and texture. Too much baking soda without enough acid can leave an unpleasant taste.

How to substitute baking powder for baking soda
- Use the 3:1 ratio. Replace 1 teaspoon of baking soda with 3 teaspoons (1 tablespoon) of baking powder.
- Keep any baking powder already in the recipe. Add the replacement amount for the missing soda in addition to the recipe’s original baking powder.
- Expect a possible change. The extra leavener may make the result cakier or alter its flavor; too much baking powder can taste bitter or otherwise off.
Do not add extra acid automatically. The recipe may already contain acidic ingredients, and changing the acid or liquid balance without accounting for the full formula can create a different problem.

Does cream of tartar replace baking soda?
