Follow the recipe’s chilling and churning directions
Do not treat a churning estimate as a promise for every machine. Cuisinart’s Custard Gelato recipe makes about six cups, calls for overnight chilling, and estimates 30–40 minutes of churning for its named ice cream and gelato maker. The recipe says it can also be frozen in a regular ice cream maker according to that model’s instructions.
