The right roasting pan depends on size, stovetop use, rack design and cleanup. Compare four picks drawn from published tests and learn what to check before buying.

The best roasting pan depends on what you cook and how you use it afterward. For a versatile stainless-steel pan, The Kitchn’s pick is the Cuisinart MultiClad Pro 16-inch; for a lighter value option, Reviewed favors the Circulon 56539; for a nonstick pan, The Kitchn selects Caraway; and for a premium stainless alternative, Reviewed recommends Viking’s 3-Ply model. These are distinct picks from published reviews, not a single head-to-head test of all four.

Nonstick Caraway Roasting Pan The Kitchn’s nonstick pick, reported to cook evenly and clean easily in its review. The Kitchn reported a nine-pound pan and a low-sitting U-shaped rack; it also cautioned against metal utensils on the coating.
Premium stainless alternative Viking 3-Ply Stainless Steel Roasting Pan with Nonstick Rack Reviewed named it overall after oven and stovetop tests, praising heat distribution, comfortable handles, sturdiness and cleanup. Reviewed described it as hefty. The rack is nonstick, so follow its current care and heat guidance.

These recommendations synthesize reviews with different test methods and dates. Prices and stock change; no current price is quoted here. Check the manufacturer’s care instructions and the exact model listing before purchase.

How to choose a roasting pan

How big should your roasting pan be?

Start with the oven, then the food. A pan must fit your oven with enough clearance to slide in and out safely, and its interior should accommodate the roast without crowding vegetables or obstructing heat circulation. Food Network’s buying guidance treats size and weight as practical selection factors; Epicurious likewise emphasizes rack clearance and construction. Check the pan’s interior dimensions, not just its advertised length, and compare them with your oven rack and the food you cook most often.

A dedicated pan is most useful for large poultry and roasts. For smaller everyday cuts, a skillet may be sufficient, as Food Network and Epicurious note in their buying guidance.

What kind of material do you want in a roasting pan?

Multi-ply stainless steel with an aluminum core is a common choice in the cited reviews because it combines heat distribution with a surface suited to stovetop cooking. The Kitchn describes the Cuisinart’s aluminum core surrounded by stainless steel; Reviewed praised heat distribution in the Viking. These are findings about specific tested pans, not a guarantee that every stainless pan performs alike.

Nonstick models can simplify food release and cleanup, but coating care, utensil restrictions and heat limits vary by product. Carbon steel can also be a capable value choice: Reviewed’s test included nonstick and stainless pans and found its Circulon pick performed well. Match the material to your cooking and cleanup preferences rather than assuming one construction is best for every use.

Check the rack, handles and base

  • Rack shape and clearance: A V-shaped rack can help stabilize poultry. Food Network’s reviewers caution that a U-shaped rack may leave less space beneath the roast for vegetables or drippings. Check how securely a rack sits and whether you can lift it when loaded.
  • Handles: A large roast makes the loaded pan substantially harder to manage than an empty one. Look for handles you can grip securely with oven mitts and enough clearance from the pan body.
  • Flatness and stovetop use: A flat base matters if you want to make gravy or sear in the pan. Reviewed found flat-bottomed pans easier for gravy and stovetop work; a raised center can affect where oil collects.
  • Cleaning: Consider whether the pan and rack are easy to clean and whether the manufacturer permits dishwasher use. Do not assume a nonstick finish or rack is safe for every utensil, temperature or cleaning method.

What the published tests actually covered

The picks above come from separate reviews, not one standardized competition. The Kitchn’s November 9, 2025 update says it tested five pans by roasting a 4-to-6-pound chicken over two pounds of vegetables, assessing browning, moisture, cooking time, vegetable fit and browning, then making gravy across two gas burners. It named the Cuisinart overall, Farberware’s 12-by-16-inch nonstick roaster its budget pick, and Caraway its nonstick pick. Read The Kitchn’s roasting-pan review.

Reviewed says it tested ten roasting pans, roasting chicken and pork loin over vegetables, making gravy across two burners, searing pork, and evaluating cleanup, handles, rack movement and pouring. It selected Viking overall and Circulon for value. The opened page does not establish a publication or update year, so its results should not be presented as a verified 2026 test. Epicurious’s November 2024 review says it tested 11 models, including nonstick, stainless steel, aluminum and ceramic pans. Its overall pick was the Anolon Triply Clad Stainless Steel Roaster with Nonstick Rack; the review reports crisp vegetable browning and easy cleanup, but also says it was the heaviest tested, at over 10.5 pounds, and has a 500°F oven limit with no broiler use because of the nonstick rack. As Beth Lipton and Kendra Vaculin put it in that November 14, 2024 Epicurious article, “The good news is that with roasting pans, it’s hard to go wrong.” That is their editorial assessment, not a controlled-test finding. Their review’s Anolon recommendation differs from the other picks here because the publications tested different pans using different protocols and chose for different priorities.

Other tested pans worth knowing about

  • Farberware 12-by-16-inch nonstick roaster: The Kitchn’s budget pick. Its reviewer reported that the heavy-gauge steel pan and rack browned chicken well and cleaned easily. Confirm the current model and coating instructions.
  • All-Clad E752C264 large roaster with nonstick rack: Reviewed reported strong oven performance and well-designed handles, but found that its raised center caused oil to pool toward the sides during searing.
  • Anolon Triply Clad Stainless Steel Roaster with Nonstick Rack: Epicurious’s November 2024 overall pick. Its test findings and reported heat limit are described above; check current manufacturer guidance before use.
