For mature dry onions, harvest when tops have naturally fallen across much of the planting and begun to dry, while the necks are starting to dry too. Extension guidance puts the practical threshold at roughly half to two-thirds of tops down; the signs together matter more than an exact percentage. Don’t bend or break healthy green tops to hurry the process.
How to tell when onions are ready to harvest
Look across the whole bed for natural dieback. Kansas State University Extension advises harvesting when at least half the tops have fallen; Iowa State says most should have fallen and begun drying; Nebraska Extension suggests about two-thirds. These are practical ranges, not competing exact rules. Drying necks reinforce the signal that mature bulbs are ready.
A single bent top is not enough if it may have been damaged. Wait for natural dieback across much of the planting, and check that the necks are beginning to dry. Nebraska Extension reports that 80% foliage dieback is associated with optimum flavor and sweetness in its guidance, but that figure is not a universal requirement for every garden or condition.
Why you should not knock the tops over
Let healthy tops fall on their own. Breaking them early interrupts growth and can leave smaller bulbs that store less well, according to University of Illinois Extension.

When the calendar helps—and when it doesn’t
There is no single harvest date that applies everywhere: timing varies with region, planting date, and cultivar. Illinois Extension gives late July or early August as regional guidance, while mature onions commonly come in during mid-to-late summer. Use those dates as local examples, not a nationwide schedule.
A dated commercial postharvest reference from UC Davis lists approximately 10–20% fallen tops as one maturity indicator, alongside a neck that is dry to the touch and not slippery. That 1996 guidance is for commercial postharvest handling, so it is not directly interchangeable with the more conservative home-garden extension recommendations above.

Green onions are harvested earlier
Green onions are intended for fresh use and do not need to reach dry-bulb maturity. Illinois Extension says they may be pulled once the tops are about six inches tall. Scallions can be harvested when they look usable for your meal.
How to lift mature onions without bruising them
- Choose a dry time to harvest. Pull bulbs carefully by their foliage, or slide a garden fork into the soil below the bulbs and lift gently to loosen them.
- Keep the tops attached and handle bulbs gently. Bruises can raise the risk of rot during storage.
- Move onions to a warm, dry, well-ventilated place out of direct sun to cure. In very hot, bright weather, Illinois Extension advises moving freshly pulled bulbs into shade to avoid sunburn.
How to cure onions before storage
Curing dries the tops, necks, and outer layers so bulbs are better prepared for storage. Spread onions in a single layer in a well-ventilated spot, or hang them in bunches with airflow. Keep them out of direct sun.

Published home-garden guidance gives a range of two to four weeks: Iowa State University Extension and Outreach specifies two to three weeks, while Nebraska Extension and Kansas State University Extension give two to four weeks. Judge completion by the onion, not the calendar: tops and necks should be thoroughly dry, and the outer skins should be papery. Iowa State says the outer scales begin to rustle when the bulbs are ready.

Trim only after curing. Iowa State recommends leaving about one inch of top; Kansas State recommends trimming tops and roots to one-half inch. Both stress airflow. Use mesh bags, wire baskets, or another airy container rather than sealing onions in a container that traps moisture.

For cool, dry storage, Iowa State specifies 32–40°F and 65–70% relative humidity. Nebraska Extension recommends 32–36°F and 60% or less humidity for its longest-storage conditions, and cautions against freezing. Storage life also depends on cultivar: sweet or poor-keeping onions should be used sooner than varieties suited to storage.
