Start with materials and cooking habits
- Stainless steel: A versatile option for browning and everyday cooking, but it requires different heat and food-release technique than nonstick and may take more effort to clean. Stainless is the material in the Hestan, Tramontina, All-Clad, and Cuisinart picks.
- Nonstick or ceramic-coated: Consider these when easy release matters, and follow the maker’s care instructions to protect the coating. The Circulon pick is ceramic-coated; the Caraway review also reports easy release and hand-wash care.
