Keep summer-planted winter crops moist as they establish; once rain is keeping the root zone moist, reduce or stop irrigation. In winter drought, local conditions matter: Oregon State University Extension’s Central Oregon guidance says to water only when the ground is warm enough to accept water.
When should you water fall and winter vegetables?
Check the soil beside the plants and account for recent rain. Newly sown seeds, seedlings and transplants need particular attention while they establish; avoid letting them dry out during this stage. Germination and flower or fruit development are also periods when vegetables can be especially sensitive to water stress, though crops and conditions vary.

Soil type affects how quickly moisture is lost. Sandy soil drains faster than clay, while poorly drained soil can stay wet too long. Central Oregon gardeners may improve sandy soil’s water-holding capacity with suitable amendments, as described in Oregon State University Extension’s guide to growing vegetables in Central Oregon.
How rainfall and region change the schedule
West of the Cascades
For winter vegetables west of the Cascades, Oregon State University Extension says irrigation is generally unnecessary after fall rains begin, usually from mid-September to mid-October. Treat that as regional guidance, not a date to apply everywhere: check whether rain is actually keeping the soil moist around your plants. See OSU Extension’s winter vegetable production guidance for west of the Cascades.

Central Oregon during winter drought
If a winter dry spell leaves the garden short of moisture, Central Oregon guidance advises watering only when the ground is warm enough to accept water. The guidance does not give a numerical soil-temperature threshold. See OSU Extension’s guidance for gardening in Central Oregon’s climate.
How to check whether the soil needs water
Use the simple check recommended in OSU Extension’s Watering Basics: push a finger about 2 inches into the soil near a plant stem. If the soil is dry at your fingertip, water; if it is moist, wait. This checks the soil where the plant is growing rather than relying on a set watering day.

How to water when irrigation is needed
Deliver water at ground level so it reaches the root zone. OSU Extension’s vegetable gardening guide describes trickle irrigation as more efficient than overhead watering; a soaker hose is one easy, low-cost option. It is not necessary if rainfall is already keeping the soil moist.

Do not treat the guide’s estimate of about 1 inch of water per week as a winter target: that figure applies to vegetable crops from April through September, and the guide notes that needs vary with crop, growth stage and environment.

What cold-weather watering advice does—and does not—establish
The cited guidance supports adjusting irrigation to moisture, rainfall, region and ground condition. It does not establish a universal winter watering calendar, a precise temperature threshold for watering frozen-season soil, or a numerical rule for watering immediately before a freeze. Where winter conditions are uncertain, avoid turning a warm-season watering amount into a cold-weather schedule.
For broader cold-season context, OSU Extension’s September 2025 article on planting cold-hardy vegetables for a spring harvest quotes Jim Myers, an OSU vegetable-breeding and genetics professor: “Winter gardening is a risky business.” That is a general observation about winter gardening, not a watering instruction.
