There is no single calendar date for picking apples. The right time comes when a particular cultivar reaches maturity where you grow it, and you confirm that with the fruit itself: its flavor, its ground color, its firmness, and whether it lifts off the tree with a gentle twist. Typical picking windows are a useful starting point, but they are not a schedule. Weather can move them from one season to the next.
Why no single date works
Harvest timing depends on three things: the cultivar, the local climate, and that season’s weather. Iowa State University Extension gives late summer as the typical window for early cultivars such as Pristine and Red Free, and late October for later types such as GoldRush, Enterprise, and many heirloom varieties. It also cautions that a cultivar’s picking period can shift by a week or more with growing-season weather, so a printed window is a range rather than a deadline.
Climate matters as much as the calendar. Oregon State University Extension publishes variety windows that apply specifically to midseason climates. Oregon also has earlier and later maturity zones within the state, so the same variety can ripen weeks apart from one part of the state to another. A date that works in one orchard may be off by a meaningful margin in the next valley.
Typical windows by cultivar
The table below uses the two extension sources most often cited for this question. The Oregon column applies only to midseason climates in the Oregon State University Extension table. The Iowa column reflects Iowa State University Extension’s general examples. Where a source does not list a cultivar, the cell says so instead of filling a guess.

Use these rows as a first estimate only. If you live outside a midseason climate, or in a different state or country, start with your local extension service or a cultivar guide for your region, then move to the fruit-based checks below.
How to tell an apple is ready
No single sign works for every cultivar or climate. Combine several observations before you pick, and do not rely on red color, seed color, or a calendar date alone. Some red apples turn red before they are fully mature.

Taste
Sample a few fruit from different parts of the tree. A mature apple should be juicy and show the flavor typical of its variety. Immature fruit often tastes sour, coarse, or starchy.
Ground color
In many cultivars, the background color (the non-red area of the skin) shifts from green toward yellow as the fruit matures. Color behavior differs widely by variety, so learn what your cultivar normally looks like at maturity rather than comparing it with a generic photo.

Firmness and texture
A mature apple should feel firm and crisp. Fruit picked too early can be hard and starchy, while fruit left too long can turn soft or mealy. Firmness is most useful when you compare fruit from the same tree over several days.
Ease of release
A ripe apple separates from the spur with light pressure. Lift it gently and twist upward. If the fruit resists, leave it for a few more days and test again. Do not pull down or yank, because that can damage the stem and the fruiting spur that will bear next year’s crop.

Brown seeds and a few sound apples on the ground can support the other signs, but they should not decide the matter on their own.

The same tree can be harvested in more than one pass. Fruit meant for immediate eating is usually left on the tree until it reaches its best eating quality. Fruit intended for longer storage is generally picked earlier in the cultivar’s harvest window, subject to variety-specific maturity guidance. If you are unsure which applies, harvest a portion early and keep the rest on the tree for a later pass.

Commercial growers manage this with more precise tools. University of Maryland Extension notes that the appropriate indicators vary by cultivar or strain, orchard block, year, and target market, and it recommends representative sampling instead of assuming all fruit matures at once. Its 2021 publication FS-1180 (webpage updated in 2022) advises starting weekly monitoring about four to five weeks before the anticipated normal harvest date, and it reports that there may be 5 to 20 days between the estimated and optimal harvest dates for a specific cultivar or strain. For a backyard tree, weekly sampling of a few fruit is a practical equivalent.
How to pick without damaging the tree
- Choose a sample of fruit from the outside and upper parts of the tree, where sun exposure often brings maturity earlier.
- Hold the apple in your palm and lift it gently upward.
- Roll the fruit back, or twist it slightly, so that it separates with the stem attached.
- Place each apple gently into a picking bag or container. Do not drop or pile fruit.
- Set aside any fruit with bruises, cuts, disease, or insect damage for prompt use or disposal. Keep sound fruit separate.
Iowa State University Extension recommends rolling the fruit back with the stem attached and placing it gently into a container. Shaking the tree or yanking fruit can bruise apples and damage spurs.
Storing the harvest
Refrigerate sound apples soon after picking. Apples Extension (2019) gives 32°F as a typical storage temperature and 95% relative humidity as a general recommendation. These are source guidance rather than a setting that suits every cultivar or every storage system. Its general description of regular refrigerated storage puts the period before significant quality loss at roughly 30 to 90 days, depending on variety.
For a home harvest, a refrigerator crisper drawer with the apples kept in plastic bags is a practical approach, because it provides cool temperatures and high humidity. Keep damaged fruit out of storage, and use bruised apples first, since they deteriorate faster.

Controlled-atmosphere storage can extend the season to 6 to 7 months, according to Apples Extension’s description of commercial storage. That is a commercial system, not an expectation for a home refrigerator.

Troubleshooting common harvest problems
- The apples will not release. The fruit is probably not yet mature. Wait several days, then test a few apples again using taste and firmness.
- The apples are sour or starchy. The fruit was picked too early. Leave the rest on the tree and check again in a few days.
- The apples are soft or mealy. The fruit may be overripe. Pick the remaining crop promptly and use the softest fruit first.
- Some fruit is falling on its own. A few windfalls can be a supporting sign of maturity, but they do not replace the other checks. Harvest sound windfalls promptly and keep them apart from fruit on the tree.
- Red apples look ready but taste flat. Red color can develop before full maturity. Use taste and ground color to decide.
