Tips for Growing Elderberries: Choosing, Planting, and Caring for Them

Grow elderberries with a sunny, moist site, suitable regional plants, more than one cultivar, and careful rust and harvest management.

For a productive elderberry planting, choose the right species for your region, give shrubs sun and reliably moist but well-drained soil, and plant more than one cultivar to support pollination. The guidance below covers American elderberry, the focus of the strongest regional production information; spacing and commercial figures are tied to their sources rather than treated as universal rules.

Which elderberry should you grow?

Most of the garden and production guidance here concerns American elderberry (Sambucus canadensis, also called Sambucus nigra subsp. canadensis). Penn State Extension describes this as the native American subspecies and distinguishes it from non-native European elderberry. The University of Missouri Extension guide says American elderberry appears better suited to commercial production in Missouri than European elderberry; that is a regional assessment, not a continent-wide ranking. Before buying plants or cuttings, check with a local extension service or reputable regional nursery about species and cultivar suitability. Hardiness, site conditions, and local availability vary, and the reviewed guides do not establish a universally best cultivar or a current inventory of nursery stock.

How should you choose and prepare a planting site?

Sun, soil, and water

Choose a sunny site with moist, well-drained soil and plan for dependable water access. Penn State Extension’s 2025 home-garden guidance gives an ideal soil pH range of 6.8–7.2. Treat that as a garden reference for its audience, not a universal commercial prescription; a soil test and local recommendations can help guide amendments.

Spacing and pollination

Penn State’s 2025 garden article recommends 5–7 feet between plants and says to plant at least two varieties within 60 feet for wind pollination. Those are home-garden figures. Missouri Extension notes that elderberry pollination is not fully understood and that research suggests cross-pollination may be required, so planting multiple cultivars is a prudent way to support fruit set rather than a guarantee of a particular harvest.

How do you establish and maintain elderberries?

Use correctly identified plants or cuttings, keep the planting area free of competing weeds, and monitor plants as they establish. Missouri Extension describes elderberry as relatively pest resistant but recommends monitoring, sanitation, weed control, and removing prunings. It reports that American elderberry can bear large crops in the second year after establishment; actual timing and crop size depend on cultivar, site, and care.

Prune to maintain a manageable planting and remove diseased or damaged material. Missouri Extension notes that pesticide options and efficacy research are limited; do not apply a product unless it is currently labeled for the crop and use, and follow the label and local guidance.

How can you prevent and respond to elderberry rust?

Wisconsin Extension describes rust as yellow, powdery galls that can distort growth. It is not lethal, but in fruit plantings it can disrupt flowers and fruit and reduce yield. Its home-garden recommendations include:

  • Prune galls 4–6 inches below the affected area and disinfect tools between cuts.
  • Remove nearby sedges where practical.
  • Thin plants to improve airflow.
  • Use drip or soaker irrigation instead of overhead sprinklers to keep foliage drier.

When and how should you harvest elderberries safely?

Harvest fully ripe, deep-purple fruit, as Penn State Extension advises. Do not eat elderberries raw, and do not eat the leaves. Remove leaves and as many stems as possible before using the fruit.

For jam or jelly, Missouri Extension’s August 2026 guidance calls for correctly identified ripe fruit, thorough cooking, scientifically supported formulations, and tested processing methods. Shelf-stable preserves are not made safe simply by choosing an arbitrary recipe or using a water-bath process; follow a tested recipe and its processing directions. What should prospective growers know about commercial production?

Missouri Extension’s production guide draws on Missouri research and grower experience, so its practices and cultivar discussion are most relevant to that region and the Midwest. Its planning budget is an example of how to model an enterprise, not a forecast for another location.

The University of Missouri’s November 2024 budget uses October 2024 assumptions and models an irrigated one-acre planting of 908 plants at 4-foot-by-12-foot row spacing. Those are scenario inputs, not a universal recommended layout, yield, revenue, or profitability estimate. Before investing, build a local budget that accounts for site preparation, irrigation, labor, harvest and postharvest handling, and a realistic market for the crop.
