For most home cooks, the Baking Steel Original is the best pizza steel to buy. Its 16-by-14-inch, quarter-inch carbon-steel surface has strong support from both manufacturer specifications and independent published testing, and it produces the crisp, well-browned crust most people want from a conventional home oven.
The NerdChef Standard Baking Steel is the closest alternative, especially if you value its corner finger holes or want access to thicker versions. The Dough-Joe Samurai is the best choice for shoppers who specifically want a square 15-by-15-inch steel.

1. Baking Steel Original: best overall
The Baking Steel Original is the safest recommendation for most standard home ovens. Its 16-by-14-inch footprint is designed around common oven dimensions, while its quarter-inch thickness balances heat storage, cooking performance, weight, and preheat time. The manufacturer lists a pre-seasoned carbon-steel construction, U.S. manufacture, and a weight of approximately 15 pounds on its current product page; other official wording has listed 16 pounds, so “about 15–16 pounds” is the most useful consumer-facing description. Baking Steel’s official specifications describe it as suitable for pizza, bread, grilling, stovetop cooking, and other high-heat uses.
Its strongest case is pizza in a conventional range oven. TechGearLab reported cooking times of roughly five to six minutes in its test context and found that the Original produced consistently strong results. Epicurious also selected it as its best pizza steel after comparative testing. Those results make it particularly appealing for New York-style pizza, where a crisp underside and a relatively fast home-oven bake matter more than precisely reproducing a Neapolitan pizza oven.
#1 Best Overall
- CRISPY CRUST IN UNDER 10 MINUTES - This 16x16 pizza steel conducts heat up to 20x more efficiently than a ceramic pizza stone, providing intense, even heat distribution. Preheat your oven to 500°F with the steel in it for 45–60 minutes and cook a pizza in under 8 minutes. Achieve the same restaurant-quality results of a wood-fired oven using your standard oven at home!
- 16x16 FITS MOST STANDARD OVENS - At 16" x 16", this steel can cook pizzas up to 15" in diameter and fits comfortably on most full-size oven racks. Measure your oven's interior depth before ordering to make sure this 16" cooking steel will fit. The 14" x 14" is recommended for compact, apartment-sized, or European-style ovens. At 17.6 lbs, this baking steel has a similar weight to a large dutch oven or a case of soda, while being slightly lighter and easier to manage than the 14x20 steel.
- CHOOSE THE RIGHT STEEL THICKNESS - The 1/4" is the most versatile thickness, providing the right balance between heat retention and weight for most home cooks. It handles everything from Neapolitan-style pizza to sourdough bread to frozen pies. The lightweight 3/16" steel works for cooking one pizza at a time. If you're cooking multiple pizzas back-to-back and want maximum heat retention, step up to the 3/8" Deluxe. For most people 1/4" is the right call.
- OVEN, GRILL, STOVETOP, CAMPFIRE - Great for more than just pizza, use this steel for sourdough bread, smash burgers, roasted vegetables, breakfast, and flatbreads. At 16" x 16" it fits over two burners on most gas and electric ranges. On the grill, it works as a flat-top griddle surface with the same low-carbon steel handling direct flame without warping.
- MADE IN THE USA & BUILT TO LAST - Precision CNC laser-cut from a single piece of low-carbon steel in Minnesota. Ships shot-blasted (not pre-seasoned) - season it once before first use: wash, apply a thin coat of oil, and bake at 375°F for one hour. After that, it builds a natural non-stick patina with every use, similar to cast iron. No Teflon, no PFAS, no coatings that chip or wear off. Virtually indestructible, it won't crack from thermal shock like a ceramic stone.
The trade-offs are straightforward: it is heavy, it needs a long preheat, and carbon steel can rust if it is left damp or stored without a light protective coating of oil. Baking Steel recommends preheating for approximately 45–60 minutes and currently advises a 500–550°F oven setting. That time and energy use are part of the ownership cost, not an optional extra.

2. NerdChef Standard Baking Steel: best alternative and value pick
The NerdChef Standard Baking Steel is a close competitor to the Baking Steel Original. The standard model is approximately 16 by 14.25 inches and one-quarter inch thick, with a pre-seasoned surface and a smooth finish intended to make launching and removing pizza easier. Its two punched corner holes are a practical distinction: they give you defined handholds when the steel is cool. They do not make a hot, roughly 16-pound slab easy to lift, so heat-resistant handling and patience still matter.
Epicurious found the standard quarter-inch NerdChef broadly comparable to the Baking Steel Original in performance. That makes it a sensible choice when its dimensions, price, handling holes, or availability work better for your kitchen. The standard model weighs about 16 pounds, putting it in the same general handling category as the Original.
NerdChef also sells thicker three-eighths-inch and one-half-inch versions. More steel means greater thermal mass: the surface can retain more heat during repeated baking, which may help a cook who launches several pizzas consecutively. But the penalty is substantial. Bon Appétit lists the three-eighths-inch version at approximately 23 pounds and the one-half-inch model at approximately 32 pounds. Those are not casual upgrades. They require a suitable rack, a storage plan, and the ability to handle the slab safely after it cools.

Measure your oven's interior depth before ordering to make sure this 16" cooking steel will fit. The 14" x 14" is recommended for compact or apartment-sized ovens. This heavy-duty steel is designed for maximum heat retention, weighing 27.5 lbs or about as much as a case of bottled water.
- IS 3/8" RIGHT FOR YOU? The 3/8" Deluxe is built for back-to-back cooking since it stores more heat than thinner steels and recovers faster between pizzas. If you're hosting, batch cooking, or serious about bread baking, this is the right call. If you're cooking one pizza at a time and want something lighter to handle, the 1/4" gives you most of the performance at roughly 10 lbs less. The lightweight 3/16" steels are easier to manuever and best for thin crust pizzas.

Virtually indestructible, it won't crack from thermal shock like a ceramic stone.
Independent testing found the three-eighths-inch NerdChef capable of producing strongly browned crusts in a conventional oven, while TechGearLab described it as a durable, high-heat slab with strong cooking performance. That does not mean the thicker version is automatically better: the extra preheat time, weight, and handling burden may outweigh the additional thermal reserve for a household that makes pizza occasionally.
Buy it if: you want a close alternative to the Original, appreciate corner finger holes, or are an experienced baker who can make practical use of the thicker models. For most first-time buyers, the standard quarter-inch version is the more reasonable starting point.
3. Dough-Joe Samurai: best square-format option
The Dough-Joe Samurai is the pick for buyers who specifically prefer a square steel. The Samurai is listed as a pre-seasoned 15-by-15-by-quarter-inch pizza steel, and Dough-Joe’s product family also includes the three-eighths-inch Shogun and one-half-inch Emperor. The square footprint can provide comfortable edge clearance around a centered 12-inch pizza, but it can also be harder to fit in a narrow oven than a rectangular steel. Measure before purchasing; a nominal 15-inch width may leave little room for the oven walls, rack supports, or door clearance.
The thicker Shogun and Emperor versions are aimed at cooks who want more thermal mass for repeated baking sessions. As with the thicker NerdChef models, that benefit comes with more weight and generally longer heating. A large steel should never be chosen on thickness alone: verify the rack’s support, the available storage space, and your ability to move it without dropping or tilting it.
Quick wins for a faster PC:
Fix the driver behind crashes, sound loss and screen glitchesFind Drivers →Repair Windows errors before they cause bigger problemsFix Now →Scan for outdated or missing drivers - takes under a minuteDriver Scan →The evidence for the Samurai is not as strong as it is for the Baking Steel Original or NerdChef. The available research is primarily official Dough-Joe product information and user discussion rather than a robust, independently verified head-to-head laboratory comparison. That does not establish poor performance; it means the recommendation is based more on format, specifications, and use case than on equivalent comparative testing.
Buy it if: a square 15-by-15-inch surface fits your oven and suits the way you shape or launch pizza. Choose it for the geometry, not because the available evidence proves it outperforms the two rectangular alternatives.

Why a pizza steel works
A pizza steel improves the connection between a home oven and the dough. Once thoroughly heated, the metal transfers heat into the dough more rapidly than a conventional baking sheet. Its mass also helps the surface recover after a cold pizza is launched.
Thickness changes that balance. A thicker steel stores more heat, which can be useful when baking several pizzas in succession, but it takes more time to heat and is harder to lift. A quarter-inch model is therefore the practical default: it offers a substantial thermal advantage without turning the steel into a 20- or 30-pound piece of kitchen equipment.
Recommended Free Tools
A steel does not turn a 500–550°F home oven into an 800–900°F wood-fired pizza oven. Baking Steel distinguishes typical home-oven temperatures from the substantially higher temperatures reached by dedicated pizza ovens. TechGearLab likewise found the Original well suited to New York-style pizza, not equivalent to the one-to-three-minute bakes associated with high-fired Neapolitan ovens. Expect a faster-browning, crisper home-oven crust—not an exact replica of a restaurant pizza oven.
What to check before buying
1. Measure the oven, not just the product listing
Check the usable rack width and depth, rather than measuring only the inside edges of the oven cavity. Account for the rack rails, side walls, door movement, and enough clearance for air circulation. The Baking Steel Original’s 16-by-14-inch dimensions are intended to fit many standard home ovens, but individual ovens vary. A 15-inch-wide square steel may fit one oven comfortably and be impractical in another.
2. Treat weight as a primary specification
These steels are much heavier than ordinary bakeware. Confirm that the rack is stable and supported, and decide where the steel will live between uses. Do not carry a hot steel with wet or loose oven mitts, and do not try to reposition it while a pizza is sitting on top.

- WE ARE PIZZA PEOPLE: Staining is a very normal part of the pizza making process. Marks and stains will not affect the performance or function of the stone. Many cooks even prefer a stone that has been well used!
3. Match thickness to your baking schedule
- 1/4 inch: the best general-purpose choice for most home cooks.
- 3/8 inch: potentially useful for repeated pizzas and aggressive bottom browning, but heavier and slower to heat.
- 1/2 inch: a specialist choice for experienced users with suitable storage, rack support, and handling strength.
More thermal mass is helpful only if your oven, schedule, and body mechanics can accommodate it.

Plan on approximately 45–60 minutes for the Baking Steel Original, following the manufacturer’s guidance. The exact time depends on the oven, rack position, starting temperature, and cooking goal, but a short warm-up is unlikely to heat the center of a heavy steel thoroughly. Put the steel in a suitable rack position before preheating and allow it to reach temperature before launching the pizza.
5. Consider the rest of the setup
A pizza peel is not part of the steel, but it is the most directly relevant accessory: it lets you transfer shaped dough onto the hot surface and remove the finished pizza without reaching into the oven. Use enough flour or another suitable release technique to prevent sticking, but avoid excessive loose flour, which can burn on the steel.
Independent reader supportYour contribution helps us test, update, and keep practical guides available for everyone. How to use a pizza steel in a home oven
- Place the steel on a stable oven rack. Use the manufacturer’s recommended orientation and leave reasonable clearance around it. A higher rack can help the top of the pizza brown more quickly, while a lower position emphasizes bottom heat; the best placement depends on your oven and broiler configuration.
- Preheat thoroughly. Set the oven to the temperature appropriate for your recipe—Baking Steel’s current guidance for the Original is 500–550°F—and allow roughly 45–60 minutes as a starting point.
- Prepare and launch the pizza efficiently. Shape the dough on a lightly floured surface or peel, add toppings without letting it sit so long that it sticks, and slide it onto the steel in one controlled motion.
- Watch the crust rather than relying only on the clock. Published testing of the Original found approximately five- to six-minute bakes in its test context, but dough hydration, topping load, oven calibration, and rack position change the result.
- Remove the pizza and let the steel cool in place. The metal remains dangerously hot well after the oven is turned off. Keep children and pets away and do not place the hot steel on a countertop or other heat-sensitive surface.
Cleaning and rust prevention
Carbon-steel pizza steels need simple but consistent care:
- Let the steel cool completely before cleaning or moving it.
- Hand-wash it; do not put it in the dishwasher.
- Dry it immediately and thoroughly. Remaining moisture is the main route to surface rust.
- Apply a very light coat of cooking oil after drying to help maintain the seasoning.
- Store it somewhere dry, and avoid sealing it away while damp.
According to Baking Steel’s care guidance, rust is a foreseeable maintenance issue rather than evidence that the steel is unusable. Surface rust can generally be removed with appropriate scrubbing, followed by thorough drying, oiling, and renewed seasoning. Follow the specific manufacturer’s instructions for the product you own.
Which pizza steel should you buy?
- Choose the Baking Steel Original if you want the best-supported all-around recommendation, primarily bake New York-style pizza, and want a quarter-inch steel that can serve other high-heat cooking purposes.
- Choose the NerdChef Standard if you want comparable quarter-inch performance, corner finger holes, or the option to consider thicker NerdChef models later. The standard model is the sensible choice unless you regularly bake multiple pizzas and can handle the additional weight.
- Choose the Dough-Joe Samurai if a square 15-by-15-inch format is your priority and your oven has enough usable width. Its independent-testing evidence is thinner, so treat it as a format-led recommendation rather than a proven performance winner.
- Choose none of them if you cannot safely support or store a 15–32-pound steel, cannot give it a long preheat, or are specifically seeking true one-to-three-minute Neapolitan bakes. A dedicated high-temperature pizza oven is better suited to that last goal.

Frequently Asked Questions
Is a pizza steel better than a pizza stone?
A steel transfers heat more rapidly and is generally more resistant to cracking than a stone, but it can produce a more aggressively browned bottom and needs careful seasoning and rust prevention. The better choice depends on the crust style, handling preference, and maintenance you accept.
Can a pizza steel make Neapolitan pizza in a regular oven?
It can improve browning and crispness, but it cannot reproduce the 800–900°F environment of a dedicated high-temperature pizza oven. In a conventional 500–550°F oven, expect a home-oven result rather than an exact one-to-three-minute Neapolitan bake.
Should I buy a 3/8-inch or 1/2-inch pizza steel?
Usually not unless you bake several pizzas consecutively and can safely manage the extra weight and preheat time. A quarter-inch steel is the practical default. The thicker NerdChef versions weigh approximately 23 pounds at 3/8 inch and 32 pounds at 1/2 inch, according to the cited Bon Appétit information.
How do I stop a carbon-steel pizza steel from rusting?
Hand-wash it, dry it immediately and completely, apply a very light coat of oil, and store it in a dry place. Never put it in the dishwasher or leave it wet.
The Bottom Line
Bottom line: Buy the Baking Steel Original for the best balance of published performance support, size, thickness, and versatility. Pick the NerdChef Standard when its handling design or pricing is more attractive, and choose the Dough-Joe Samurai when a square format matters more than the strength of the independent testing record.
