Extension examples from North Carolina, Maine and Maryland show regional possibilities, while Wisconsin guidance offers practical ripeness cues. Use them as clues, not a nationwide harvest calendar.
What fruits and vegetables can you harvest in August?
Regional extension guidance points to a varied August harvest. In Burke County, North Carolina, N.C. Cooperative Extension’s July 28, 2026, list of local farmers-market and roadside-stand offerings includes green beans, corn, peppers, peaches, watermelon and honeydew; it also notes area peaches and blueberries. In central Maine, the University of Maine Cooperative Extension reported on August 3, 2026, that tomatoes, cucumbers, squash and beans were at or near peak production.
These are local examples, not a promise that every crop will be ready in every garden. Planting date, weather, cultivar and growing conditions affect timing. Check your local extension service’s calendar or ask a nearby farm or market what is in season where you live.
How can you tell when August crops are ready to pick?
Use the plant’s maturity cues rather than the month alone. The University of Wisconsin Extension guide offers two clear examples; it supplies crop-specific guidance, not an August calendar.

Picking tomatoes at the first color change can help avoid cracking, splitting, insect feeding and disease, and can increase the amount of fruit that remains edible, according to Maryland Extension.
How should you handle produce after harvesting?
- Pick leafy vegetables and herbs early in the morning, when they are cool and glistening with dew, as Wisconsin Extension advises.
- Handle vegetables gently to avoid cuts, breaks and bruises.
- Move produce to a refrigerator or other cool place in a bag or covered container to help limit water loss and wilting.
- For tomatoes picked at first color change, let them finish ripening on a counter, following Maryland Extension’s guidance.
Maryland Extension’s August advice also includes harvesting herbs such as tarragon, rosemary, basil and sage. The specific harvest timing for herbs and other crops will depend on local growth and conditions.
