Neither Staub nor Le Creuset is the universal winner: both make capable enameled cast-iron Dutch ovens for braises, stews, soups, and other stovetop-to-oven cooking. In the cited side-by-side test, Good Housekeeping chose Le Creuset overall for ease of use and versatility, while Staub produced richer broth in its recipes. The practical choice comes down to what matters more in your kitchen: seeing browning clearly and handling a lighter-feeling pot, or preferring a dark interior and Staub’s distinctive lid.
At a glance: Staub vs. Le Creuset
| What matters | Staub | Le Creuset |
|---|---|---|
| Interior | Dark matte enamel hides marks but makes fond and browning harder to see. | Light, smooth enamel makes browning easier to monitor but shows stains more readily. |
| Lid | Underside has bumps intended to return condensation to the food; whether they make a noticeable difference is disputed. | Smooth, curved lid; do not assume it lacks condensation circulation. |
| Handling | Often described as heavier in publisher comparisons, but listed weights vary by model and source. | Often described as lighter and easier to grip in publisher comparisons; exact model dimensions and weight matter. |
| Reported cooking results | Good Housekeeping reported richer broth in its stew and bean soup tests; meat in its stew was drier and chewier. | Good Housekeeping reported browning one minute faster in its beef-stew test and better bean shape retention in its soup. |
| Best fit | Cook who prefers a dark interior, likes the lid design, and values the richer broth reported in one lab’s recipes. | Cook who wants visual feedback on browning, easier handling, or a versatile pot for general cooking and bread baking. |
What the side-by-side tests found
Good Housekeeping’s recipe tests
The Good Housekeeping Institute says it has tested more than 25 Dutch ovens over time, assessing heating, cooking, cleanup, usability, and consumer feedback. In its Staub-versus-Le Creuset comparison, it prepared beef stew and white bean and escarole soup. For the stew, the lab browned meat in three batches and braised the dish for 90 minutes.
In that beef-stew test, Good Housekeeping reported that Le Creuset browned better and finished browning one minute faster. The pale interior also made the fond easy to see and deglaze; the lab found Staub’s fond nearly impossible to see. The Staub stew had richer broth, but its meat was drier and chewier. In the bean soup, Staub again had richer broth, while more beans broke apart; Le Creuset’s broth was less rich, and its beans held their shape better. On balance, Good Housekeeping selected Le Creuset for ease of use and versatile performance, while also praising Staub’s flavorful broths. These are results from that publisher’s particular recipes and protocol, not a guarantee of how every dish will turn out. Good Housekeeping’s comparison
Bon Appétit’s broader assessment
Bon Appétit describes the brands’ cooking performance as more similar than different and says physical characteristics often weigh more heavily in its comparison. Its testers did not notice a meaningful dish-outcome effect from Staub’s lid dimples. The article’s writer prefers Le Creuset’s lower weight and light interior, while a colleague favors Staub’s searing characteristics; those are individual preferences, not universal test results. Woman & Home’s comparison
Woman & Home also characterizes the difference as slight, favoring Le Creuset for bread baking and handling and Staub for slow cooking and its forgiving dark enamel. Its comparison table reports a 260°C oven-safe ceiling for both brands, but that figure should not be treated as a universal limit for every model, lid knob, or market. Check the current instructions for the exact pot you are considering. Woman & Home’s comparison
Interior color changes how you cook
Staub’s matte black enamel can conceal staining and signs of wear, but it also makes it harder to judge fond, browning, or whether food is beginning to burn. Le Creuset’s light-colored enamel gives a clearer view of those changes, which helps when building fond for a pan sauce or checking the base of a stew. The trade-off is that marks show more readily on the pale surface.

Good Housekeeping found Staub harder to assess as clean and described Le Creuset’s light surface as easy to clean, although burnt-on marks may still take extra effort. The comparison sources recommend hand washing as the prudent care approach. Neither interior color guarantees an easier cleanup in every cooking situation.
The lid design is a feature, not a proven guarantee
Staub’s lid has small bumps or dimples on its underside. The intended self-basting design returns condensation to the food as it cooks; Le Creuset’s lid is smooth and curved. Good Housekeeping observed richer broths in its Staub stew and soup, but Bon Appétit’s testers did not notice a meaningful result from the dimples. That disagreement means the lid is a reasonable preference to weigh, not proof that Staub always makes food juicier or that Le Creuset fails to circulate condensation.

Weight and grip depend on the exact pot
Bon Appétit describes its 5.5-quart Staub example as about a pound heavier than the Le Creuset it discusses, and says Le Creuset has an easier-to-grip feel. But Good Housekeeping’s listed weights for its tested examples are 12.6 lb for Staub and 12.9 lb for Le Creuset—the opposite ordering. The measurements come from different publisher comparisons and should not be merged into one definitive ranking. Model, version, and whether a listed weight includes the lid can affect what you are comparing.
If lifting a full pot is a concern, compare the stated weight and handle dimensions for the precise models before buying. Handle width and your ability to grip the pot may matter as much as a small difference in listed weight.

Capacity, oven limits, prices, and warranty
Good Housekeeping’s tested examples were 5.5-quart models, each listed by the publisher as oven-safe up to 500°F. Its article gave test-time retail prices of $400 for the Staub and $420 for the Le Creuset. Those are the figures reported with that comparison, not current price quotes. Prices, colors, stock, and model specifications change; check current retailer listings and the product-specific maker instructions, especially the lid knob’s heat limit.
Warranty descriptions differ between the comparison sources: Good Housekeeping calls Le Creuset’s coverage a lifetime limited warranty and Staub’s a limited warranty, while Bon Appétit describes both as limited lifetime warranties. The descriptions do not establish that coverage is identical. Read the current manufacturer terms for the purchase region, exclusions, and eligibility before relying on a warranty.

Check the details before deciding
- Compare the exact model’s weight, capacity, handle dimensions, and included lid rather than relying on brand-wide assumptions.
- Confirm the oven limit and knob instructions for the specific model and market if high-heat oven use matters.
- Compare current prices and read current warranty terms; the cited articles do not establish a stable price winner or identical coverage.
