Smash Burgers at Home: The Burger Method, Griddle Setup, and Outdoor Kitchen Details That Matter

A smash burger is made by pressing a ball of ground beef into a thin patty on a hot cooking surface. For a reliable home setup, prepare the tools and toppings first, press promptly with a burger press or wide spatula, and use a thermometer to check that ground beef reaches 160°F (71.1°C), as USDA FSIS recommends.

You can cook on a dedicated outdoor griddle or use a griddle surface on a grill. Weber’s recipe provides one example: direct heat set to 170–230°C and a 10-minute preheat. Those are that recipe’s directions, not a universal griddle-surface temperature or timing rule.

For outdoor cooking, the practical priorities are a suitable cooking surface, a pressing tool, a way to check the center of a thin patty, and a clean workflow that keeps raw beef separate from ready-to-eat food. Plan where ingredients and cooked burgers will go before the cooking starts.

What Makes a Smash Burger Different?

A smash burger starts as a ball of ground beef rather than a pre-shaped patty. Pressing it firmly on a hot, flat surface makes it thin and increases its contact with the cooking surface. Weber’s recipes describe using a grill press; a wide spatula is another stated option.

A dedicated outdoor griddle and a grill-compatible griddle surface are both possible setups. The cited recipes demonstrate a griddle on a grill but do not compare the results of different surfaces or materials. Choose a setup suitable for your cooking space and follow its manufacturer’s instructions.

Press promptly, while the beef is still in a ball. Parchment between the meat and press can help prevent sticking, according to Weber’s classic smash-burger recipe. Avoid relying on browning or grill marks to determine whether the burger is safe to eat; USDA says color is not a reliable indicator of safe internal temperature.

The Basic Smash Burger Formula

Weber’s classic smash-burger recipe specifies an 80/20 ground-beef blend. That is one recipe’s choice, not proof that it is the only suitable blend. Use a burger press or the back of a wide spatula to press the beef thin, and have a thermometer ready to check doneness.

How to Make Smash Burgers at Home

Set up the cooking area before the beef goes on the heat. Put buns, seasonings, toppings, a clean tray, and cooking tools within reach. Keep raw beef and its juices away from ready-to-eat food and clean utensils.

  1. Prepare the cooking surface. Follow the appliance or griddle manufacturer’s instructions. As one recipe-specific example, Weber directs cooks to set a grill for direct heat at 170–230°C, place the griddle over the heat, lightly grease it, close the lid, and preheat for 10 minutes. This is not a universal surface-temperature rule.
  2. Set out ingredients and tools. Keep raw beef separate from buns, vegetables, cooked burgers, and clean utensils.
  3. Place the beef balls on the griddle. Work in batches that suit the cooking surface and appliance instructions.
  4. Season and press promptly. Press firmly with a burger press or the back of a wide spatula. Parchment between the press and beef can help prevent sticking.
  5. Cook and turn according to your recipe and appliance instructions. Do not treat a browned surface as proof of safe doneness.
  6. Check the center with a food thermometer. For a thin patty, insert the probe through the side toward the center. USDA FSIS recommends 160°F (71.1°C) for ground beef.
  7. Serve with clean utensils and a clean tray. Do not reuse items that contacted raw beef for cooked burgers unless they have been cleaned.

Choosing a Smash Burger Setup

The research supports several practical choices, but does not compare brands, materials, durability, capacity, or prices. Consider how each tool fits the space and how easily you can check the center of a thin patty.

Choice What the cited sources support What to consider
Dedicated outdoor griddle A griddle is a suitable surface for the recipe method. Follow the appliance’s setup and use instructions.
Griddle surface used on a grill Weber demonstrates a griddle placed over direct heat on a grill. Weber’s stated heat setting and preheat time are recipe-specific.
Burger or grill press Weber recipes name a press for making a thin patty. Parchment between the press and beef may help prevent sticking.
Wide spatula Weber names the back of a wide spatula as an alternative pressing tool. Choose a tool that can press the beef firmly.
Food thermometer USDA recommends checking ground beef’s internal temperature. For a thin patty, insert the probe through the side to the center.

Food Safety for Outdoor Cooking

USDA FSIS recommends cooking ground beef to a safe minimum internal temperature of 160°F (71.1°C), measured with a food thermometer. USDA thermometer guidance says color and other visible signs are not reliable ways to confirm safe temperature. For a thin patty, insert the thermometer through the side so the probe reaches the center.

Planning an Outdoor Cooking Station

Think through the workflow before cooking: where raw beef will sit, where the press and spatula will go, and where cooked burgers will land. Stage buns, seasonings, toppings, a thermometer, and a clean tray in advance. These are practical planning suggestions, not comparative findings from the cited recipes.
