Induction is usually the better choice if you want fast heat response and less residual surface heat—and your cookware and electrical setup are compatible. Radiant electric is a practical fit if you want to keep using pans that do not work with induction. The right choice depends on your existing cookware, cooking priorities, and the requirements of the exact cooktop you plan to install.
How induction and radiant cooktops heat a pan
Induction heats compatible cookware directly
An induction cooktop uses a coil beneath its surface to create an electromagnetic field. That field heats compatible, ferromagnetic cookware, rather than first heating a burner element and then transferring heat through the glass. The U.S. Department of Energy explains that cooking stops when the pan is removed, although heat from a hot pan can warm the surface afterward. The DOE’s induction overview and ENERGY STAR’s electric cooking guidance describe this heat transfer.
Radiant electric heats the glass cooking zone
A radiant cooktop has an electric heating element beneath its glass-ceramic surface. The element heats the glass, which then transfers heat to the pan. Because the glass retains heat, a zone can stay hot after you switch it off. SCHOTT CERAN’s overview describes the transfer through glass-ceramic, and GE Appliances’ guidance notes that radiant surfaces can remain hot enough to continue cooking after shutoff.
Which cooktop is faster and easier to control?
Induction is generally faster to respond when you change a setting, and ENERGY STAR says it offers better temperature control than radiant or coil cooking. The scale of any time saving depends on the cooktop, pan, and task; a published boiling comparison is not a guarantee for every meal.

- The DOE reported in May 2023 that Consumer Reports testing found induction cooktops boiled water 20–40% faster than the tested gas and traditional electric cooktops. The DOE article does not provide the underlying test methodology, so treat this as a result for tested products rather than a prediction for your kitchen. DOE’s summary

These figures use different comparisons and contexts, so they should not be combined into one induction-versus-radiant speed estimate. For everyday use, the key distinction is that induction responds through the pan, while radiant heat must pass through the cooking surface, which also retains heat after the setting changes.
Will your existing cookware work?
Induction requires compatible cookware; radiant electric does not have the same magnetic requirement. Before replacing pans or choosing a cooktop, try the magnet test suggested by ENERGY STAR: see whether a magnet sticks to the pan base. Cast iron, stainless steel, and enameled cast iron are examples of cookware that may work, but a magnet test is a useful screening check, not a guarantee for every pan or cooktop. How much surface heat remains after cooking?
Radiant glass gets hot as it transfers heat to the pan and can remain hot after the element is turned off. GE says its hot-surface indicator remains lit until the surface cools. With induction, the surface is not heated by a burner element when no pan is present, but a hot pan can transfer heat back to the glass. Neither technology makes a cooking surface risk-free; follow the manufacturer’s safety instructions and avoid touching a zone that may still be hot. Check installation details before choosing a model
Induction and radiant cooktops both vary by model. Compare the actual appliance specifications and installation guide rather than assuming a technology label tells you what will fit. ENERGY STAR’s product criteria identify fields such as installation type, dimensions, zones, controls, voltage, and amperage; reported annual energy use relies on a specified usage assumption, and real use varies with household patterns. - Confirm the installation type and the countertop cutout dimensions, including width, height, and depth.
- Check the cooktop’s voltage and amperage against the specific installation guide. Do not infer a required circuit rating from a general comparison; consult a qualified installer if requirements or existing wiring are unclear.
- Compare the number and arrangement of cooking zones, control type, and any bridge or specialty zones you actually need.
- Check the included features, such as cookware sensors or smart controls, on the exact configuration; feature availability varies by model.
- Verify current product pricing directly with retailers. The DOE’s May 2023 article included historical examples for induction products, but they are not a current, like-for-like price comparison with radiant cooktops.
Which cooktop should you choose?
- Choose induction if quicker response and boiling, more direct control, or less residual surface heat matter most, and your pans and installation meet the model’s requirements.
- Choose radiant electric if you want electric cooking without induction’s magnetic cookware requirement and the model’s installation details suit your kitchen.
- Compare exact models if features, dimensions, controls, or electrical requirements are deciding factors. The technology alone cannot tell you whether a particular cooktop fits your project.
ENERGY STAR says certified electric cooking products are 18% more efficient on average than standard models; that statistic applies to the certified category overall, not specifically to induction versus radiant.
