Induction is generally faster at boiling water and transfers more heating energy to cookware; gas may suit a kitchen already equipped for it or cooks who prefer a visible flame. Neither is automatically cheaper to run. Your bill depends on local utility rates and cooking habits, while a switch also involves cookware compatibility, appliance fit, electrical service, and installation costs.
How induction and gas heat a pan
Induction uses electromagnetic energy to heat compatible cookware directly. Gas burns fuel and transfers heat from a flame to the pan. Because the two appliances deliver heat differently, their efficiency figures do not by themselves predict what a household will pay.
ENERGY STAR’s consumer guidance puts the share of heating energy transferred to cookware at about 85% for induction and about one third for gas cooking products. In separate 2021–2022 ENERGY STAR award material, the approximate figures are 85% for induction, 32% for gas, and 75–80% for conventional electric resistance. That material cites Frontier Energy’s July 2019 Residential Cooktop Performance and Energy Comparison Study. These are approximate comparisons, not estimates of individual utility-bill savings.
Does induction boil water faster than gas?
In findings reported by the U.S. Department of Energy in 2023, Consumer Reports testing found induction boiled water 20–40% faster than the tested gas and conventional electric cooktops. Treat that as a result from the tested appliances, not a guarantee for every cooktop, pan, or cooking task. ENERGY STAR also describes induction as offering quick heating and precise temperature control.

Induction stops heating when cookware is removed from the cooking zone, according to DOE. Gas instead provides a visible flame and a familiar burner format. That can be a meaningful preference, but a flame alone does not establish that gas is faster or more precise for a particular cooking task.
Is induction cheaper to run than gas?
There is no universal answer from efficiency percentages alone. A household’s operating cost depends on how much energy its cooking requires, the local price of electricity and gas, fixed utility charges where applicable, and how often and how long the household cooks. Without those figures, it is not possible to declare one option cheaper for your home.

Before deciding, compare your current utility rates and typical cooking use. For a replacement, add the cooktop price, any cookware you actually need to replace, and installation quotes. A built-in induction cooktop may require an electrical supply or cabinetry changes; a gas replacement has its own connection and fit requirements. Check current rebate eligibility with the relevant official program before including a rebate in your budget: the U.S. Department of Energy’s Home Upgrades page describes possible rebate pathways, including up to $840 for an eligible ENERGY STAR-certified induction cooktop. Eligibility, program operation, location, and available funding can vary.
Will your pots and pans work on induction?
Try a refrigerator magnet on the bottom of each pan. ENERGY STAR says cookware that attracts the magnet will work with induction. Cast iron, stainless steel, and enameled cast iron are common compatible examples; for cookware that gives an uncertain result, check the manufacturer’s guidance. Replace only the pans that are incompatible and that you need for your cooking.

Everyday surface care and indoor air
With induction, the cookware is heated by the cooking zone, rather than by a flame or a radiant element. The glass surface can still become warm through contact with a hot pan, so it should not be treated as cool during or just after cooking. Its smooth surface is easy to wipe, but ENERGY STAR warns that glass or ceramic surfaces can scratch or crack if scrubbed abrasively or struck or damaged by cookware.
Gas combustion has a different indoor-air profile. DOE identifies nitrogen oxides, carbon monoxide, and formaldehyde as pollutants from gas cooking. An electric cooktop does not burn gas at the appliance. This describes the difference in combustion emissions; it does not establish an individual health outcome.

What to check before replacing a built-in cooktop
- Physical fit: Confirm the replacement fits the countertop cutout and cabinetry.
- Utility service: Verify that the home has the electrical supply required by the induction model, or the gas connection required by a gas model.
- Installation cost: Get quotes for the actual appliance and any electrical, gas, or cabinetry work rather than relying on a generic estimate.
- Cookware: Test the pans you use before budgeting for replacements.
- Rebates: Check current rules and funding with the official program serving your location.
If you rent or want to try induction before replacing a built-in cooktop, DOE notes a portable single-burner induction appliance as an option. Check the appliance’s instructions and electrical requirements, as well as current availability; this option does not establish a current model price.

DOE announced final efficiency standards for new residential cooking products on January 29, 2024, with compliance required for newly manufactured, including imported, models beginning January 31, 2028. The rule is not a blanket requirement to use induction. DOE’s announcement also projected $1.6 billion in household utility-bill savings over 30 years across shipments covered by the standards; that projection is not an estimate of savings for an individual switching from gas to induction.
