Pick a lemon when it is large enough for your use and has the juice and flavor you want—not simply when its peel turns yellow. Because lemons are valued for their tartness, a taste test of one representative fruit is the most useful home-garden check. Picked lemons will not become sweeter or ripen more fully off the tree.
How to check whether a lemon is ready
- Check its size. Compare the fruit with what is usable for your variety and intended purpose. Lemons do not need to reach a sweet-citrus flavor before harvest; they are commonly grown for their acidic juice. Mississippi State University Extension advises harvesting when the fruit reaches a usable size and has adequate juice content. Read Mississippi State Extension’s citrus guidance.
- Sample one fruit. Pick and taste or juice a representative lemon. If its acidity, flavor, and juice amount work for your cooking or drinks, harvest similarly developed fruit. If it is too sharp for your preference or has too little juice, leave comparable fruit on the tree and check again later. This practical taste-first approach follows UC Cooperative Extension’s advice to use taste rather than rind color to judge citrus harvest readiness. UC Cooperative Extension explains why rind color can mislead.
- Assess each lemon individually. Trees can carry fruit at several stages of development at once, so one ripe lemon does not mean the whole crop is ready. Inspect and pick the fruit that meets your needs rather than stripping the tree based on a single color or size cue. UF/IFAS describes this uneven development in Florida home landscapes.
Do lemons have to turn yellow before you pick them?
No. Peel color is a clue, not a dependable universal maturity test. UC Cooperative Extension cautions that citrus can develop a fully colored rind before it is ready to eat. Color also varies with cultivar and growing conditions, so a yellow peel alone does not establish that a lemon has enough juice or the flavor you want.

Harvest advice can differ because it addresses different goals and regions. UF/IFAS describes a Florida home-garden practice of picking mature lemons while light green, often at about 1½ to 2 inches in diameter, then curing them at room temperature until the peel turns yellow and smoother and juice content increases. That regional practice is not a universal size rule, and the peel change after harvest is not evidence that the lemon has become sweeter. For commercial handling, UC Davis reports minimum juice-content standards of 28 or 30 percent by volume depending on grade; those standards are not a required test for a home tree. See UC Davis’s commercial lemon maturity and quality information.
When Meyer lemons are ready
Meyer lemons have a milder flavor target than typical lemons. For that flavor, UC Cooperative Extension recommends waiting until the fruit is deep yellow or orange, fragrant, and firm with just a slight give. Fruit that has moved beyond dark green can still be used, but it will be more acidic; leaving it to ripen after picking will not mellow its flavor. Read UC Cooperative Extension’s Meyer lemon harvest advice.

Why a calendar or color is not enough
Harvest timing varies with cultivar, crop load, temperature, and growing practices. UF/IFAS gives a range of 4 to 12 months from flowering to harvest, depending on those factors, so counting from bloom cannot provide a reliable date for every tree. Use size and a sample fruit’s juice and flavor to make the decision for the crop in front of you. UF/IFAS details the factors that affect lemon development.
Pick and store lemons without damaging them
If you plan to store harvested fruit, handle it gently and avoid cuts, scratches, and bruises. UC Davis notes that dark-green-picked lemons have a longer postharvest life than fully yellow fruit, which must be marketed more quickly—a commercial storage distinction, not a reason to pick every home-grown lemon green. Use clean garden harvest snips or small pruning shears if they help you remove fruit without tearing or scraping the rind. Since lemons do not sweeten after harvest, use or refrigerate picked fruit rather than leaving it on the counter in hopes that it will ripen further. UC Davis covers lemon handling and postharvest life.
