For hot-fill jam, some food-safety authorities describe using clean jars prepared in a hot oven or a hot dishwasher cycle. Follow the guidance for your location and method: these directions are not a universal substitute for a tested home-canning process. Do not sterilize jars in a microwave; USDA Food Safety and Inspection Service says, “Do not use the microwave for home canning or sterilizing jars.”
Start with clean, sound jars
Before choosing a method, inspect every jar and discard any that are chipped, cracked, damaged or otherwise suspect. Wash the jars, then use the preparation method recommended by the food-safety authority relevant to your jam-making process. The Food Safety Authority of Ireland (FSAI) sets out these checks in its 2014 Country Markets hygiene guide.
Oven method: follow the specific authority’s directions
FSAI and Polish guidance
For its jam-making hygiene guidance, FSAI says to put clean jars in an oven preheated to 180°C for at least five minutes. It advises sterilizing lids separately in boiling water. The Polish Chief Sanitary Inspectorate gives the same minimum time and temperature in its 2022 guidance on homemade preserves. These are attributed directions, not a universal recipe for every jar, lid or canning process.

Local small-producer directions
Orkney Islands Council and Dover District Council also describe oven-based disinfection, but in local guidance for small producers and with directions that differ from the FSAI and Polish approach. Do not combine the different instructions into a single temperature-and-time rule. Follow the applicable local guidance for the product you are making.

Dishwasher method: an option in some jam guidance
FSAI describes washing jars through a hot dishwasher cycle and letting them air-dry in the dishwasher. Orkney and Dover also mention a hot dishwasher cycle as a disinfection option in their local guidance. This does not establish that any dishwasher cycle is suitable for every home-canning recipe or can replace the jar preparation required by a tested canning process.
Keep prepared jars protected from contamination until filling. Orkney advises that jars be fully dry before use; it and Dover describe inverting jars after disinfection. Follow the relevant authority’s directions rather than assuming these handling details apply to every process. Sources: FSAI, Orkney Islands Council and Dover District Council.

Microwave method: do not use it
USDA FSIS explicitly advises: “Do not use the microwave for home canning or sterilizing jars.” It does not provide a microwave time or workaround for jar sterilization. See USDA FSIS guidance on cooking with microwave ovens.

Preparing a jar does not by itself make the finished preserve shelf-stable. FSAI’s directions concern jam-making hygiene; local council advice addresses disinfection for small producers. For shelf-stable home canning, use a tested recipe and follow its complete process and relevant local food-safety guidance. The University of Maine Cooperative Extension says microwave, dishwasher and oven sterilization are not approved methods for canning jars in its Food Canning Basics guidance. Dover likewise stresses using standard recipes and methods.

- Use intact jars designed for food preservation and appropriate to the recipe and processing method.
- Follow the jar or lid maker’s instructions where applicable; lid preparation may differ from jar preparation.
- Keep hot glass away from abrupt temperature changes and handle it carefully to reduce burn and breakage risks.
- Do not assume sugar or acidity alone makes a recipe or storage method safe.
