You can display intact whole fruits and vegetables without refrigeration under USDA guidance for farmers markets, but that does not make every crop suitable for an unrefrigerated stall. Keep cut, peeled, packaged, and temperature-sensitive produce cold; protect everything from bruising and contamination; and check local market rules before deciding what to sell or how to handle it.
Sort produce by whether it needs cold holding
The key distinction is the product’s condition and storage needs—not simply whether it is a fruit or vegetable. USDA’s Food Safety and Inspection Service (FSIS) says whole fruits and vegetables can be displayed without refrigeration at farmers markets. It specifically identifies strawberries, lettuce, herbs, and mushrooms as perishable produce that should be refrigerated once home. FDA consumer guidance also says to refrigerate perishable produce and all produce purchased pre-cut or packaged.

| Produce category | Stall handling | Guidance and qualification |
|---|---|---|
| Intact, whole fruits and vegetables | May be displayed without refrigeration under USDA FSIS farmers-market guidance. Protect from damage and contamination. | General guidance; it is not a crop-by-crop shelf-life guarantee or a substitute for local requirements. USDA FSIS, 2024: farmers market food safety. |
| Perishable whole produce, including strawberries, lettuce, herbs, and mushrooms | Keep cold when cold holding is needed; FDA recommends a refrigerator at 40°F or below for these examples. | The FDA temperature is household refrigerator guidance, not a validated stall-display specification. FDA: cleaning and storing fruits and vegetables. |
| Pre-cut, peeled, or packaged produce | Refrigerate; do not treat it like intact whole produce displayed at ambient conditions. | USDA FSIS says pre-cut or peeled produce needs refrigeration for safety; FDA advises refrigerating pre-cut or packaged produce. Sources: USDA FSIS and FDA. |
For cold-dependent items, a cooler with ice, frozen gel packs, or frozen beverages is a practical cold-source option. USDA FSIS advises consumers to keep perishables below 40°F in an insulated bag or cooler during market shopping and travel home. That is transport guidance, not approval of a particular stall display arrangement; use cold holding only in a setup that maintains the required conditions and meets applicable rules.

Start with sound produce and clean containers
Choose produce without bruises or other damage, and place it in clean, suitable containers. Damaged items are more vulnerable to quality loss during handling. Keep containers clean between uses, and avoid stacking or packing produce in ways that crush it.
#1 Best Overall
- Square insulated shopping bag
- 3.5 gallon capacity
- Perfect for groceries
- Keeps items cold or hot
- Durable construction
Handle and transport gently
Minimize handling and avoid rough transport that can bruise or split produce. Arrange stock so customers can select items without repeatedly disturbing the rest of the display. These are quality-protection measures; they do not replace cold holding for produce that needs it.
Keep water and ice sanitary
If water or ice contacts produce, it must be clean and sanitary. Do not mist produce with questionable water or assume that washing removes every contamination risk. The FDA’s voluntary industry guide discusses sanitary water and ice and clean handling practices, while noting that optimum storage temperatures vary by commodity: FDA guide to minimizing microbial food-safety hazards in fresh fruits and vegetables.

Do not treat shade or mist as refrigeration
Shade may reduce direct sun exposure, but the reviewed agency guidance does not validate shade, misting, evaporative coolers, or display crates as substitutes for cold holding. FDA notes that ideal storage temperatures vary among commodities, so one ambient display approach cannot be assumed to suit every crop. Use shade and careful display practices to protect quality where appropriate, but do not rely on them to make temperature-sensitive, cut, peeled, or packaged produce safe without refrigeration.
No stall-specific unrefrigerated display duration is established in the cited guidance. In particular, do not apply the USDA FSIS “one hour above 90°F” advice for other perishable foods as a shelf-life rule for whole produce.

Check crop needs and market rules before selling
There is no universal storage recipe or stall temperature for every crop in the available agency guidance. Check reliable crop-specific handling information, and ask the local health department and market operator what equipment, temperatures, and handling practices they require. FDA’s industry guide is voluntary and does not replace applicable law. USDA Agricultural Marketing Service rules cited here apply to the USDA Farmers Market, not every market: USDA Farmers Market information.
For each item, confirm whether it is intact or cut, whether it is perishable and needs cold storage, how it will be protected from damage and contamination, and what local rules apply. If you cannot reliably maintain cold conditions for an item that needs them, do not plan to display it as though an unrefrigerated setup were equivalent.
