Cook sausages mostly over moderate, indirect heat, then move them briefly over direct heat to brown if you like. Set up a cooler zone on either grill, shift sausages away from flames as soon as flare-ups start, and use a food thermometer to confirm they are cooked through.
Why sausages flare up—and how to respond
Fat dripping from sausages onto a flame or hot coals can ignite and create a flare-up. Moderate heat and an indirect cooking zone reduce the sausages’ direct exposure to flames. If flames rise, move the sausages to the cooler zone until they subside; do not leave them over the flare-up to char.
USDA’s National Institute of Food and Agriculture recommends medium heat to help prevent flare-ups from dripping fat in its grilling-season guidance. Weber’s Australian 2025 sausage recipe recommends indirect heat to help avoid split skins and keep sausages juicy. That is recipe guidance, not a guarantee that skins will never split.
Set up an indirect-heat zone
On a gas grill
- Preheat the grill according to its manufacturer’s instructions.
- Heat one part of the grill while turning off or reducing the burner beneath another part of the grate. The burner settings needed depend on your grill.
- Cook the sausages over the area without an active burner beneath it. Keep the hotter area available for brief browning at the end, if desired.
On a charcoal grill
- Light the charcoal and let it become ready for cooking, following the grill manufacturer’s instructions.
- Bank the lit coals to one side of the grill.
- Place the sausages over the side without coals directly beneath them. The coal-free area is the cooler zone.
Cook, move, and brown the sausages
- Place sausages over indirect heat and turn them as needed so they cook evenly.
- If a flare-up reaches them, move them to the cooler zone until the flames die down.
- When they are nearly done, briefly move them over direct heat for browning if desired, watching closely and moving them back if flames flare.
- Check the center with a food thermometer rather than judging doneness by color or grill marks.
There is no single reliable cooking time for every sausage: thickness, grill temperature, weather, and grill setup all affect how long cooking takes. Follow package directions as well as the temperature guidance below.

Check the safe internal temperature
USDA warns that grilled food can brown quickly before reaching a safe internal temperature. Its grilling and food safety guidance gives these minimum temperatures by meat category:

| Ground beef, pork, veal, or lamb | 160°F |
| Ground poultry | 165°F |
For a thin sausage, insert the thermometer probe from the side toward the center so the sensing area reaches the middle. USDA explains probe placement for thin foods in its food thermometer guidance. A basic instant-read food thermometer is a practical way to check.

Direct versus indirect heat

Both gas and charcoal grills can provide these zones, but they create them differently: gas uses burner control, while charcoal uses coal placement. The available guidance does not establish that either fuel produces better results overall.
