To grow jalapeños, plant healthy transplants or start seeds, then move plants outdoors only after frost risk has passed and the soil is warm—University of Maryland Extension advises at least 65°F. Give them sun, fertile well-drained soil, and steady moisture. Pick mature, firm peppers green, or leave them on the plant to ripen red.
When to plant jalapeños
Jalapeños are warm-season peppers. A calendar date alone is not reliable: use your local frost information and check that the soil has warmed before transplanting. Maryland Extension warns that peppers planted before soil reaches 65°F may stall. Cool weather can slow growth, and frost can injure plants. See Maryland Extension’s home-garden pepper guidance.
Temperature stress can also affect flowering and fruit set. The University of Connecticut describes temperature-related fruit-set problems, but local conditions vary; a threshold from one region should not be treated as a universal cutoff. Choose a sunny spot with fertile, well-drained soil. Raised beds or containers can help where garden soil drains poorly, though containers dry faster and need more frequent moisture checks. Avoid planting peppers repeatedly in a spot with a history of pepper disease.
Start seeds or plant transplants
Starting from seed
Follow the seed packet and local extension recommendations for timing. Utah State University describes pepper seed germination around 80°F and seedling growth at 65–75°F. These are growing-condition guidelines, not a guarantee of a set number of days to transplant. Start indoors if your outdoor warm season is too short for sowing directly after frost.

Choosing and planting a transplant
Choose a sturdy, healthy plant and acclimate it gradually to outdoor conditions before planting. Set it out after frost risk has passed and the soil is warm. Water it in after planting. For garden rows, Maryland Extension lists 12–24 inches between plants and 30–36 inches between rows. Those figures are home-garden row guidance, not a universal spacing recommendation for pots; account for the cultivar and container size.
Give plants sun, water and suitable soil
Water consistently
Keep the root zone evenly moist rather than waterlogged, especially while plants flower and fruit develop. Utah State gives 1–2 inches of water per week as general pepper guidance; Iowa State gives about an inch per week. These are broad guides, not fixed schedules: rainfall, heat, drainage, mulch and container volume all change how often to water. Check the soil and water when needed, directing water to the root zone. Deep, less frequent watering is preferable to repeatedly wetting only the surface. Feed without overdoing nitrogen
Use a soil test and locally appropriate fertilizer guidance rather than applying a field-production rate to a home bed or pot. Too much fertilizer, particularly nitrogen, can encourage leafy growth and delay fruiting. Penn State lists a soil pH range of 5.8–6.6 in its pepper production guidance; treat it as production guidance, not a universal target for every home garden. Support flowering and fruit development
Growth may slow in cool weather, while temperature stress or uneven moisture can interfere with blossoms setting fruit. Keep watering consistent through flowering and early fruit growth. Tall plants or branches carrying a heavy crop may benefit from staking.

Recognize possible blossom-end rot
A dark, leathery spot at the blossom end of a pepper is a symptom associated with blossom-end rot, not proof of a single cause. Irregular moisture, excess nitrogen and root disturbance are among the factors linked to the problem. Review watering consistency and recent plant stress; avoid excess fertilizer and disturbing roots. Iowa State and Utah State describe these associated factors in their Iowa State and Utah State guidance.
Harvest jalapeños green or red
Pick peppers when they are mature and firm. Jalapeños are commonly harvested green, but fruit can remain on the plant to ripen red. Utah State reports that peppers may take 35–45 days from flowering to full color, depending on temperature and variety; that is an approximate range, not a fixed jalapeño timetable. Pick regularly to encourage continued flowering and fruiting. Handle stems gently, using clean snips if pulling could break a branch.

Choose a jalapeño variety for your conditions
Compare named cultivars by days to maturity, fit with your local climate, disease resistance, fruit size and intended use, and whether you want to harvest green or wait for red fruit. Pepper types and maturity classes vary, but the cited guidance does not establish one jalapeño cultivar as best for all regions or provide current comparative trials and seed availability.
