Grilling and broiling both use intense radiant heat, but the heat comes from opposite directions: ordinary open-grate grilling heats food from below, while an oven broiler heats it from above. That changes the equipment, flavor and cooking experience—not the safe internal temperature food must reach.

The Culinary Institute of America describes grilling as radiant heat from below and broiling as the related method with its heat source above (Culinary Institute of America). These are common U.S. culinary meanings; terminology and appliance designs can vary.
What broiling is good for
Broiling can cook lean or thinner cuts of meat, fish and vegetables, and it can brown casseroles or melt cheese. Because food sits near intense overhead heat, the surface may brown quickly. Follow your oven maker’s directions for rack position and cookware, and monitor the food closely. Adjust the distance or cooking time if it is scorching before the interior is done.
The University of Florida IFAS Extension lists 500–550°F as a broiling range in its method-comparison table; that is the guide’s reference range, not a universal setting for every oven (University of Florida IFAS Extension). Use your appliance instructions and recipe to determine the appropriate setup.

Can you broil instead of grill?
Often, yes: broiling offers a similar direct-radiant-heat approach indoors and can brown a food’s surface. It is not an exact substitute. Heat comes from above rather than below, the cooking setup is different, and broiling does not necessarily reproduce the smoke and grate-related char of grilling. Results vary with the food and appliance.
How to keep either method safe
Use a food thermometer in the thickest relevant part rather than judging safety by surface browning. USDA Food Safety and Inspection Service minimums are:

These targets apply whether the food is grilled or broiled. The USDA FSIS provides the temperature guidance in its Safe Temperature Chart. It also warns that appearance and color are not reliable indicators of safety or doneness (USDA FSIS guidance on meat and poultry color).
- Keep raw and cooked food, plates and utensils separate to prevent cross-contamination.
- Do not partially grill meat or poultry with the intention of finishing it later.
