Fresh herbs can bring a savory edge to breads and scones. Rosemary, thyme, and sage are the most directly supported choices for these bakes; basil and mint are more experimental options best used with care. Start with a recipe’s measured amount, chop leaves finely, and account for the bake’s heat and duration.

Which fresh herbs work best in bread and scones?

Rosemary, thyme, and sage appear in a soda-bread or scone recipe, while rosemary also features in a Tuscan-style herb bread. Basil and mint are familiar culinary herbs, but the cited baking recipes do not establish them as tested bread or pastry ingredients.

Rosemary

Rosemary has a pronounced savory flavor and is named in both the Food Network recipe from Darina Allen and King Arthur Baking’s Tuscan-style bread. Chop it finely so it distributes through the dough, rather than leaving large, concentrated pieces.

Thyme

Thyme is one of Darina Allen’s suggested fresh herbs for soda bread or scones. It suits savory doughs; cheese or citrus are possible pairing ideas, not combinations established by the cited recipe.

How much fresh herb should you use?

Use recipe-specific quantities where available, rather than treating one amount as a universal rule. Darina Allen’s soda-bread or scone recipe calls for two tablespoons of chopped fresh herbs. King Arthur Baking’s Tuscan-style bread uses two tablespoons of fresh herbs, or two teaspoons of mixed dried herbs. These are amounts for those recipes, not a guaranteed formula for every dough.

If substituting dried herbs, Health Canada’s general guidance is to use one-third as much dried herb as fresh: one teaspoon of dried herb can replace one tablespoon of fresh. Herb strength and behavior vary, so follow the recipe when it gives its own conversion.

How do baking heat and timing affect fresh herbs?

Health Canada cautions that “When baking at high temperatures, fresh herbs can overcook easily.” Follow the recipe’s directions, particularly for a long or hot bake. Do not assume fresh leaves will retain their full aroma through every baking time and temperature.

What if you want a more established herb choice?

If you would rather use herbs specifically named in baking recipes than experiment with basil or mint, consider chives, parsley, marjoram, or oregano. Allen names chives and parsley for soda bread or scones; King Arthur Baking suggests marjoram and oregano as possible herbs for its Tuscan-style bread.
