For an uncoated metal option, earlier Bon Appétit and Epicurious tests favor Fat Daddio’s ProSeries Anodized Aluminum Standard Muffin Pan. These are recommendations drawn from different publishers’ tests—not three pans compared side by side in one 2026 test.
Which muffin pan should you choose?
Choose a rigid coated pan if easy release is your first priority, or uncoated anodized aluminum if you want to avoid a nonstick coating. The Food Network and Wilton pans have positive release and browning observations from Food Network Kitchen’s 2026 test. Fat Daddio’s was praised for heat distribution and golden, domed muffins in earlier tests by Bon Appétit and Epicurious. Since the publishers used different recipes, dates and methods, their results are useful comparisons, not a single controlled ranking.

What each recommendation is best for
Food Network: best overall in its 2026 test
Food Network Kitchen tested ten pans across standard, mini and jumbo sizes and several materials. For its standard-mix test, it lightly greased each pan with butter, baked at 400°F using size-specific time windows, cooled muffins in the pans for five minutes, and assessed cooking, doming, browning, texture and cleanup. The Food Network pan’s reported even cooking and browning, together with easy release, make it the clearest all-round pick from that test.
#1 Best Overall
- 12-CUP MUFFIN PAN: Ensures a perfect bake every time for your favorite muffin and cupcake recipes
- PROVIDES EVEN HEAT DISTRIBUTION: Distributes heat evenly for thorough baking
- SCRATCH-RESISTANT NONSTICK COATING: Nonstick coating provides excellent release with or without cupcake liners
- DISHWASHER SAFE: Pan is dishwasher-safe to make clean up quick and easy
- MADE WITH DURABLE STEEL: Measures 15.3" x 10.75" x 1.2" and is made with heavy duty gauge steel to resist warping and offer high quality baking for years to come
Food Network describes the coating as silicone-based and free of PTFE, PFOA and PFAS. Those are claims reported by the review; confirm the product’s current labeling if coating composition is a deciding factor.
Wilton: best nonstick in Food Network’s test
Wilton is a practical alternative if release and cleanup matter most. Food Network Kitchen reported that muffins released easily and baked with even browning and good doming. The review says the pan can go in the dishwasher but recommends handwashing. That distinction matters: “dishwasher safe” does not necessarily mean the manufacturer recommends dishwasher cleaning as the best way to preserve a finish.
Rank #2
- Set of 2 muffin pans with 12 cups each (24 cups total); ideal for baking muffins, cupcakes, and more
- Heavy-weight steel construction provides durability and fast, even heating for uniform browning
- Nonstick coating helps ensure effortless food release; oven-safe to 428 degrees F
- Hand washing recommended; fits Amazon Basics silicone baking cups (not included)
- Part of the Amazon Basics nonstick bakeware collection
Fat Daddio’s: an uncoated alternative from earlier tests
Bon Appétit and Epicurious tested this pan in separate comparisons from Food Network’s 2026 test. Bon Appétit reported strong heat distribution and trouble-free release despite the lack of a nonstick coating; Epicurious reported even baking and golden crusts from its anodized-aluminum pick. The results make it a useful option for bakers who prefer uncoated metal, but they do not establish that it outperformed the 2026 Food Network or Wilton pans under the same conditions.

Other formats and materials worth considering
Silpat silicone pan: flexible release, less rigid handling
Food Network Kitchen reported evenly baked goods, even doming and consistent browning from the Silpat Perfect Non-Stick Muffin Pan, and said it did not require greasing in its test. Its flexible construction is less sturdy than rigid metal, so the tester placed it on a sheet tray. That support is useful when moving a filled pan in and out of the oven.
Rank #3
- 6-CUP MUFFIN PAN: Ensures a perfect bake every time for your favorite muffin and cupcake recipes
- JUMBO SIZE CUPS: Larger 3.5" gourmet-sized cups with 1.875" diameters allow you to make bakery-style oversized Texas muffins at home
- PROVIDES EVEN HEAT DISTRIBUTION: Distributes heat evenly for thorough baking
- SCRATCH-RESISTANT NONSTICK COATING: Nonstick coating provides excellent release with or without cupcake liners, and it is dishwasher-safe to make clean up quick and easy
- MADE WITH DURABLE STEEL: Measures 13.5" x 1.8" x 8.75" and is made with heavy duty gauge steel to resist warping and offer high quality baking for years to come
USA Pan Mini Muffin Pan: choose it for mini bakes
Food Network named the USA Pan Mini Muffin Pan its best mini pan, reporting easy release and even cooking. The review gives a 450°F oven limit and says it is not dishwasher safe. It belongs in a mini-format comparison: cavity size changes baking time and the finished portion, so a mini recommendation is not a substitute for a standard 12-cup pan.
How to judge browning, release and warping
“Best baking pans for even browning without warping or hot spots?” is a useful way to frame the choice, but no single test here establishes which pan is least likely to warp over long-term use. Food Network Kitchen assessed even cooking and browning during its recipe test; Bon Appétit and Epicurious described heat distribution and baked results in their own tests. Those observations can guide a purchase, but they are not durability testing or a guarantee against hot spots in every oven.
Rank #4
- Reliable Muffin Essential: The Wilton Gold Non-Stick Bakeware Muffin Pan is a home bakery pan for baking cupcakes, muffins, and more with even heat distribution and dent-resistant construction
- Durable, Non-Stick Design: This muffin pan is oven safe to 450°F and scratch-resistant; it also features an easy-release coating for perfectly shaped treats every time
- Easy Handling & Warp Resistant: Our cupcake pan offers extended handles for easy use and durable construction that resists warping
- Convenient Cleanup: This muffin pan is dishwasher safe; however, for best results, wash in warm, soapy water before first and after each use
- The Wilton Story: Since 1929, Wilton has been sparking ways to create sweeter moments through baking and cake decorating with innovative products and skill-building education
- Compare like with like. Keep standard, mini and jumbo pans in separate comparisons; their cavity sizes and baking times differ.
- Look beyond the coating label. A nonstick designation alone does not prove even browning or easy cleanup. Use reported bake and release observations, while remembering that recipes and methods vary.
- Match the material to your preference. Coated rigid pans emphasize release; Fat Daddio’s is an uncoated option; silicone offers flexibility but needs more support when handled.
- Check the exact model’s instructions. Verify oven limit, cleaning directions, warranty and capacity on the current product label or manufacturer information before buying.
Why lining and greasing can change results
A liner changes contact between batter and pan, which affects release, cleanup and crust. In Epicurious’s test context, the publication recommends liners for easier cleanup and less spreading at the top. Reviewed observed more browning on the sides and bottoms of cupcakes baked in greased, unlined cavities than in paper liners; foil liners browned somewhat more than paper liners. These findings are not a universal rule for every batter or oven. Choose based on whether you prefer easier cleanup or more direct browning, and follow the recipe’s directions.
How much confidence to put in test rankings
Food Network Kitchen’s 2026 comparison covered ten standard, mini and jumbo pans, using store-bought muffin mix and a defined bake-and-cool procedure. Reviewed’s separate comparison used blueberry muffins, vanilla cupcakes and popovers, assessing rise, browning, tenderness, filling, handling, release and cleanup. Epicurious’s 2023 test followed manufacturer instructions and compared lined and unlined cups while baking its Classic Blueberry Muffins; Bon Appétit tested small batches of blueberry muffins in more than a dozen pans, comparing lined and greased cavities. Different recipes and procedures can produce different results, so no one ranking should be read as a universal verdict.
For example, Reviewed found that the USA Pan 12-cup model it tested was sturdy and produced golden baked goods, but did not bake as evenly as some competitors in that comparison. Food Network’s favorable finding for a USA Pan mini model concerns a different format. The two observations do not establish a conflict about the same pan under the same conditions.
Care that helps preserve a pan
Follow the care directions supplied with the exact pan. Food Network’s review notes that manufacturers may recommend handwashing, soft tools and avoiding abrasive cleaners even when a pan is dishwasher safe. Epicurious likewise recommends handwashing its tested Anolon pan to help maintain it, and Utah State University Extension’s 2022 class handout advises handwashing to protect nonstick finishes. Product-specific manufacturer instructions take precedence over general advice.
