For Chemex pour-over, choose a kettle that lets you pour slowly and evenly; a gooseneck spout is a practical way to get that control. The right choice also depends on your batch size and stove: CHEMEX’s own 1.2-liter Chettle is designed for pour-over, but it does not work on induction. CHEMEX guidance does not make a gooseneck or adjustable temperature mandatory, and the available manufacturer information does not establish a universally best kettle.
What matters in a Chemex kettle?
CHEMEX’s brewing instructions call for slow pouring and even saturation. A gooseneck spout can help you direct a narrow, controlled stream over the grounds. That makes it a useful feature for manual pour-over, not a requirement: CHEMEX’s instructions describe a kettle but do not say it must have a gooseneck.
Compare kettles on the features that affect your own setup:
- Pour control: Look for a spout and handle that let you pour a slow, steady stream without struggling to direct it.
- Capacity: Choose a size that covers the water you need for your usual batch, while respecting the kettle’s minimum and maximum fill marks.
- Heat-source compatibility: Confirm that the kettle works with your stove, particularly if you use induction.
- Temperature adjustment: Consider this if you want to set a specific temperature. CHEMEX’s instructions do not specify a universal target temperature, so adjustment is an optional feature rather than an established requirement.
- Handling and care: Check safe-use instructions, materials, and cleaning guidance for the specific model.
A concrete option: the CHEMEX Chettle
The Chettle is CHEMEX’s own stovetop gooseneck kettle, listed as suitable for CHEMEX coffeemakers and other pour-over devices. CHEMEX describes its spout as providing controllable flow. These specifications apply to the Chettle only; do not assume another kettle shares them. CHEMEX also says its warranty does not apply to Amazon purchases unless the seller is CHEMEX’s own seller account and valid proof of purchase is available. Check the seller and warranty terms when buying.
Match kettle capacity to your Chemex batch
CHEMEX describes its cup measurements in five-ounce increments: its product support page gives 3 cups as 15 ounces, 8 cups as 40 ounces, and 10 cups as 50 ounces. These are brewer capacity measurements, not a promise that a batch uses exactly the same volume of water; brewing also involves grounds and the amount of water you choose to use.

The Chettle’s listed 40.5-ounce capacity is close to the stated 40-ounce capacity of an 8-cup CHEMEX, but it is below the stated 50-ounce capacity of a 10-cup model. For larger batches, check the kettle’s usable capacity and whether you can safely refill and reheat it. CHEMEX’s cup figures and their five-ounce convention are on its brewer sizes support page.
Does a Chemex kettle need temperature control?
No precise target temperature is given in the CHEMEX brewing instructions cited here. CHEMEX advises taking the Chettle off the heat once the water boils and letting it rest for approximately 30 seconds; its brewing guide similarly says to let vigorous boiling subside before pouring. That is manufacturer guidance, not a stated temperature guarantee.

If you prefer to set an exact temperature, compare electric temperature-control kettles as a personal convenience. If you choose a stovetop kettle, follow that model’s instructions and the brewing guidance you use. Adjustable temperature should not be treated as a prerequisite for making Chemex coffee.
Brewing with a controlled pour
CHEMEX’s Classic Series guidance provides a practical starting method. Use the instructions for your brewer and filter, and adjust the coffee quantity to your taste.

CHEMEX’s instructions emphasize safe stovetop use. For the Chettle, keep water between the minimum and maximum fill lines, center it on the burner, and do not use a burner larger than the kettle bottom. Do not heat it empty or let it boil dry. Handle hot surfaces and escaping steam carefully, and pour with caution. Follow the instructions supplied with any other kettle you choose.

CHEMEX lists the Chettle as dishwasher safe, but cleaning instructions for other kettles may differ. Check the current product listing and care directions before cleaning.
How to choose
- Choose a gooseneck stovetop kettle if you want direct control over a slow pour and it matches your stove.
- Choose a larger capacity if your regular batch approaches or exceeds the kettle’s usable capacity.
- Choose a different kettle if you use induction and the model you are considering is not induction-compatible; the Chettle is not.
- Pay for temperature adjustment only if you want it as a convenience; CHEMEX’s cited directions do not specify a required target.
