Choose capacity and footprint together. Lowe’s 2024 guide identifies 3–5 quarts as popular sizes and relates capacity to how many people or how much food is being cooked. The Home Depot’s 2025 guide gives a broad indoor range from under one quart to eight quarts and advises considering available space. These are retailer guide figures, not guaranteed yields or a survey of every fryer on the market.

Lowe’s says two or three baskets can let cooks prepare an entrée and sides at once. The Home Depot notes that separate baskets and oil containers can help limit flavor transfer. Whether these features are useful depends on what you cook and how much counter and storage space you have.
How to Choose a Fryer for Your Kitchen
- Decide how much you cook at once. Use the manufacturer’s stated oil capacity and food capacity, keeping those measures distinct. Consider the number of people you cook for and whether you typically make one food or several at once.
- Measure counter and storage space. Check the fryer’s listed dimensions against the space where you plan to use and store it. A larger capacity may take up more room.
- Confirm the oil-removal feature. Look for documentation of a tap or valve, built-in drainage or filtration, or a removable bowl with a pour feature. Confirm that feature belongs to the exact model and is included.
- Compare the rest of the appliance. Check basket configuration, temperature controls, timer or shutoff, removable parts, filter options, and replacement-part availability in the product listing and manual.
- Read the manual before operating or cleaning it. Follow the selected fryer’s fill limits, operating precautions, oil-draining procedure, and cleaning instructions.
Using and Cleaning a Drain-Equipped Fryer
A drain feature does not make hot oil safe to handle. Lowe’s advises not exceeding the maximum oil line, leaving the fryer attended while in use, or moving it during operation, and recommends keeping the cord away from the counter edge. Treat the selected model’s manual as the primary operating reference.

The De’Longhi D44528DZ manual states: “CAUTION: To avoid the risk of burns, do not drain the oil or fat while hot.” For models fitted with its drain tap, the manual describes removing the basket, opening the tap cover, draining into a container while watching for overflow, closing the tap, and cleaning residues. It also cautions that fat may solidify as it cools. This procedure is specific to that model; follow the instructions for your own fryer.
The same De’Longhi manual says to unplug the fryer before cleaning, check that the oil has cooled, and never immerse the fryer or put it under running water. Do not assume those model-specific directions describe every fryer’s removable parts or cleaning method; check your own manual.

Oil maintenance also depends on the fryer, oil, and food. Lowe’s says the frequency of oil changes depends on what is fried and recommends following the manufacturer’s maintenance instructions. Its guide suggests changing oil after three uses for breaded food and six to eight uses for other foods, but that is retailer guidance, not a universal rule.
