If sugar has already hardened, a slice of bread in a sealed bag can soften it, though the cited extension advice allows up to 24 hours.
How to store brown sugar
- Move it out of the paper package. Transfer the sugar to a clean, food-safe container with a lid that closes tightly.

- Close the lid after each use. A good seal limits moisture exchange and helps protect the sugar from odors.
Brown sugar contains natural moisture, so it can harden or clump when moisture conditions change. Utah State University Extension notes that it is less suitable for long-term storage than refined granulated sugar. The cited guidance does not establish one universal opened-package shelf life.
Choose a container that fits your needs
The essential feature is a reliable seal, not a specialty label. Utah State University Extension says standard food-grade plastic or glass containers can be used; it does not require a purpose-built keeper. Compare capacity, food suitability, seal quality, cleaning and access, and whether you want a place for a reusable saver.

For example, King Arthur Baking describes its stoneware saver as an accessory to soak briefly, blot dry, and place with the sugar. Its ProKeeper+ instructions specify soaking the included saver for 15 minutes and resoaking every three months; that schedule is specific to that product, not a general rule for every saver. How to soften hardened brown sugar
Use bread for a simple, slower fix
Put a slice of bread in a sealed bag with the hardened brown sugar and wait. Utah State University Extension says this can take up to 24 hours. Remove the bread once the sugar has softened. Use a microwave for a faster option
The same extension article identifies the microwave as the faster alternative, but does not specify a time or setting. Use a microwave-safe dish and heat briefly, checking frequently; stop when the sugar is workable to avoid overheating it. Use the softened sugar promptly, as it can harden again as it cools.

Use a reusable saver
Follow the instructions supplied with the specific terracotta or stoneware saver. Soaking time and maintenance schedules can differ by product; the King Arthur Baking instructions above are not universal.

Common storage questions
- Does brown sugar need refrigeration? No. Utah State University Extension advises against refrigerating sugar.
- Is a special brown sugar container necessary? No. A food-safe glass or plastic container with a tight seal is a practical option; a dedicated keeper is a convenience, not a requirement.
- Why does brown sugar harden? Its natural moisture and changes in moisture conditions can lead to hardening and clumping.
