Organize a refrigerator around three priorities: keep it at or below 40°F (4°C), contain raw meat and seafood below and apart from ready-to-eat food, and leave room for cold air to circulate. Then use drawers and door storage according to their conditions, and make leftovers that need using easy to spot.
Set the temperature and make room for airflow
Check the refrigerator’s setting and, if it does not display a reliable temperature, place an appliance thermometer inside. The target is 40°F (4°C) or below throughout the unit; FDA says an appliance thermometer is the best way to know the temperature. Keep shelves and vents from being crowded by containers. Cold air needs room to circulate, and a refrigerator’s temperature can vary by location and design. Do not assume one shelf is universally coldest: follow your appliance manual for its layout and controls.
Keep raw foods contained and separate
Store raw meat, poultry, and seafood in sealed or covered containers that will catch leaks. Keep them apart from ready-to-eat food. A bottom shelf or a dedicated meat drawer can work if it contains juices; the important point is preventing drips from reaching other food. FDA’s food storage handout cautions against storing raw animal products on upper shelves where liquid could drip onto other items.

For refrigerator storage times, USDA FSIS advises using raw poultry and ground meats within one to two days. Check its refrigeration chart for other foods.
Arrange food so it is easy to find and use
Give ready-to-eat food a clear place
Keep covered leftovers and foods that need using soon together where household members can see and reach them, away from raw items. A simple bin can group these foods, but do not block vents or crowd shelves. Visibility helps with household organization; it does not extend official storage times.

Use crisper drawers according to humidity
Vegetables generally need higher humidity than fruit. Set drawer controls accordingly when available, and consult the appliance manual for specialized settings. Produce and drawer designs vary, so avoid treating a particular arrangement as universal.
Use the door selectively
Store condiments and other foods in the door only when their labels and the appliance guidance allow it. Keep eggs in the refrigerator itself rather than the door, which is warmer, as FDA advises in Are You Storing Food Safely?

Cool, cover, and date leftovers
Refrigerate perishables within two hours, or within one hour when the surrounding temperature is above 90°F. Divide large quantities of leftovers into shallow containers so they cool faster, cover them, and label them with the date. USDA FSIS says most cooked leftovers should be used within three to four days; consult its leftovers guidance for handling details.

- Clear and check. Look over older perishables and discard food that is questionable; smell alone is not a reliable safety test.
- Clean spills promptly. Pay particular attention to leaks from raw meat, poultry, or seafood.
- Wash surfaces. Clean with hot, soapy water and rinse, as USDA FSIS recommends in its refrigeration guidance.
- Return food to its zones. Keep raw foods contained and separate, ready-to-eat foods visible, and enough space open for airflow.
Covered containers can help contain leaks and simple bins can make categories easier to scan, but neither is required. Choose any organizer that fits without blocking airflow or compromising separation. For odors, USDA FSIS suggests an opened box of baking soda on a shelf.
