You can grow potatoes through winter only where the climate and protection allow it. In mild-winter areas, potatoes planted in bags may carry through the season for a late-winter or early-spring harvest. In colder regions, use a protected or movable container, protect plants from frost, or wait to plant an early crop until local soil conditions are suitable. An unheated greenhouse or polytunnel can shelter plants, but it is not freeze-proof.

Choose a winter method that fits your conditions

“Winter” means different growing conditions in different regions. Before planting, consider how severe your freezes are, whether you have a protected growing space, and whether you can move a container when a hard frost is forecast. There is no universally reliable winter planting date; follow local extension guidance and check current forecasts.

Method Best fit Main limitation
Overwinter a grow bag Mild-winter areas, or a bag that can be protected Success depends on conditions that let the crop make it through winter; no guaranteed harvest date or yield.
Grow in a movable container Gardeners who can move a pot to shelter when cold threatens Containers can dry faster than beds and need regular moisture checks.
Start under cover An early crop where a greenhouse or polytunnel offers shelter An unheated structure does not prevent freezing.
Protect an outdoor container with fleece Places and planting times where outdoor growth is otherwise suitable Fleece offers frost protection, not a solution for severe winter conditions.
Plant an early garden or raised-bed crop Regions where local guidance allows planting in workable, well-drained soil Cold, soggy soil can increase the chance seed pieces rot.

These methods have not been established in a controlled comparison of cost or yield, so none is universally best.

1. Overwinter potatoes in a grow bag

In climates that permit continued growth, or where a bag can be protected, planting potatoes in a grow bag can carry the crop through winter for a late-winter or early-spring harvest. UC Cooperative Extension describes preparing bags for this purpose in its Growing Potatoes in Bags guide.

#1 Best Overall
Yukon Gold Seed Potatoes, Non-GMO Blue Tag Certified, Golden Yellow Skin, Creamy Yellow Flesh, Determinate Variety, Ready Fo Planting
  • VARIETY TYPE: Yukon Gold is a determinate potato variety, meaning tubers form in one main layer near the seed piece and mature uniformly for a concentrated harvest window, ideal for home gardens and raised beds
  • CERTIFIED QUALITY: Blue Tag Certified seed potatoes ensure disease-free, true-to-type stock that is Non-GMO, providing reliable performance and peace of mind for healthy, high-yielding harvests
  • APPEARANCE AND FLAVOR: Features smooth golden yellow skin with creamy yellow flesh and a rich, buttery, slightly sweet flavor profile that makes these potatoes a kitchen favorite for countless recipes
  • GROWING CHARACTERISTICS: Easy to grow for beginners and experienced gardeners alike, these short-season potatoes mature in 50-60 days and produce heavy yields when planted 4-6 inches deep with 12-inch spacing
  • CULINARY VERSATILITY: Perfect for mashing, roasting, baking, frying, soups and stews thanks to their creamy texture that holds shape beautifully while absorbing flavors, delivering golden, crispy exteriors and soft interiors

Start with growing medium, plant seed potatoes or pieces with eyes, and add more medium gradually as the stems grow. Do not add a second layer of seed potatoes in the same bag: competition can lead to small tubers, according to UC Cooperative Extension’s grow-bag guidance.

Bag yields vary. University of Maine Cooperative Extension reported an approximate 5–7 lb per grow bag, with as much as 13 lb in a good year, in its May 2020 home gardening newsletter. That is the extension’s reported experience, not a guaranteed yield or a winter-specific result.

2. Grow potatoes in a movable container

A fabric bag is optional: a deep pot or other suitable container can work if it has drainage. Plant seed potatoes or pieces with eyes; UNH Extension notes that a piece with one or more eyes can grow into a new plant. See its container potato guidance.

Move the container to a sheltered spot when cold threatens. Check its moisture regularly rather than relying on rain: containers can dry faster than garden beds. Penn State Extension covers potatoes in gardens and containers in Potatoes in the Garden and the Kitchen.

3. Start containers under cover

A greenhouse or polytunnel can shelter containers for an early crop. Garden Organic recommends starting containers under cover where frost protection is available and protecting outdoor growth as needed in its instructions for growing potatoes in containers.

Do not assume an unheated structure will keep plants above freezing. Monitor temperatures, add protection when appropriate, and move containers to a safer location if a freeze is forecast.

4. Protect an outdoor container with horticultural fleece

Where the season and local climate permit outdoor growth, horticultural fleece can provide frost protection. It does not make a container crop suitable for severe winter conditions. Garden Organic’s container instructions discuss frost protection; UC Cooperative Extension’s grow-bag guidance is also relevant to growing in containers. If a hard freeze is expected, a movable container gives you the option of bringing the plant into shelter.

5. Plant an early crop in a raised bed or well-drained garden

Some regional guidance permits planting before the last frost when soil is workable, but that is not a universal winter rule. Raised or well-drained ground can help avoid waterlogging. UC Master Gardener Program of Sonoma County offers regional advice in its potato growing guide.

Avoid cold, soggy soil: Penn State Extension warns that it can increase the chance seed pieces rot. Planting dates differ by region, so consult local extension guidance rather than copying a calendar date from elsewhere. The University of Maryland Extension home-garden guide is one example of regional guidance.

Planting and harvest basics

  • Use seed potatoes or seed pieces with eyes. A piece with one or more eyes can grow into a new plant, according to UNH Extension.
  • Choose a container with drainage. A large pot is an alternative to a fabric grow bag. Check container moisture regularly because it can dry faster than garden soil.
  • Keep soil from becoming cold and soggy. Conditions and planting dates vary by region; use local extension advice and current frost forecasts.
  • Harvest at the right stage. Mature potatoes can be harvested after the tops yellow and begin dying back. Harvest mature potatoes before a hard frost. A successfully overwintered bag crop may be ready in late winter or early spring.

For a container-specific overview, consult Penn State Extension; for overwintering bags, see UC Cooperative Extension.
