The best starting choices for compact systems are usually lettuce and culinary herbs; tomatoes, cucumbers and other larger crops need more room, light and support. Hydroponics grows plants in nutrient-bearing water rather than soil, but no single crop list fits every system.
What can I grow in an indoor hydroponic garden?
For a small countertop system, start with lettuce, salad greens or herbs. Larger crops can also grow hydroponically, but their mature roots and canopy must fit the system, and fruiting plants generally demand more light and attention. The 21 options below are practical candidates, not a ranked list or a claim that every plant suits every kit.

Leafy greens and herbs: the easiest place to start
- Lettuce. A common hydroponic crop and a strong beginner choice. It is often a better fit for compact systems than large fruiting plants. UNH Extension and the University of Saskatchewan discuss lettuce in home or hydroponic growing contexts.
- Spinach. A compact leafy option, provided the cultivar and growing conditions suit your setup. Check temperature and light needs before planting.
- Swiss chard. UF/IFAS includes chard among crops that have performed well in floating gardens.
- Watercress. Also listed by UF/IFAS as a crop grown in floating gardens.
- Basil. A commonly recommended hydroponic herb. Allow enough light and room for the mature plant.
- Mint. UC Master Gardeners of Orange County lists mint among edible hydroponic options. Its growth habit can make it worth growing in its own space.
- Other culinary herbs. Herbs are common in nutrient film technique (NFT) and deep water culture (DWC) systems, but individual species vary. Choose based on the light and mature-size requirements of the specific herb.
- Salad greens. This means a mix or category of greens, not one species. Many low-growing greens suit NFT and DWC systems; select varieties for your light and temperature conditions.
For leafy crops and herbs, see guidance from Virginia Cooperative Extension on NFT and Virginia Cooperative Extension on DWC, as well as University of Illinois Extension’s home hydroponics article.

- Tomatoes. Tomatoes are grown hydroponically, but need room for mature roots and canopy, adequate light, and usually structural support. Indoors, flowers may need hand-pollination because natural pollinators are absent.
- Peppers. A viable hydroponic crop, but usually a more demanding fit than compact greens because of its space and light needs.
- Cucumbers. Commonly grown in media systems. Allow for vine growth and provide suitable support.
- Eggplant. Listed among crops commonly grown in media systems; check that your system can accommodate its mature size.
- Strawberries. They can be grown hydroponically, though suitability depends on the system and variety.
- Melons. Virginia Cooperative Extension lists melons among crops commonly grown in media systems. Their growth habit makes them a poor assumption for a small countertop kit.
- Beans. UC Master Gardeners lists beans as an edible hydroponic option. Choose a suitable type and plan for its size and any needed support.
- Mixed vegetables. UF/IFAS reports mixed vegetable and herb production in Florida. This is a production category, not a recommendation for one particular plant or a compact home setup.
- Additional leafy greens. Leafy-green crops are grown hydroponically, but match each species and cultivar to its light and temperature needs rather than treating all greens as interchangeable.
- Additional culinary herbs. Herbs are common hydroponic crops, but the best choice depends on the species’ light requirements and the space available.
- Compact fruiting cultivars. Consider only when the system and light can support a fruiting crop. Check the cultivar’s mature size and system compatibility; “compact” does not guarantee it will fit.
Media systems are commonly used for tomatoes, peppers, cucumbers, eggplant, strawberries and melons, while NFT and DWC more naturally accommodate low-growing greens and herbs. That is a general fit, not a rule for every system or cultivar. Virginia Cooperative Extension’s NFT guidance and DWC guidance describe common crop groups.

Flowers: hydroponic, but not edible crops
- Zinnias. UF/IFAS reports that some cut flowers have performed well in floating gardens. Treat zinnias as ornamentals, not food crops, and account for their space and lighting needs.
- Sunflowers. UF/IFAS also lists sunflowers among flowers that have done well in floating gardens. Their size and light needs make them a poor match for many compact indoor gardens.
Which plants grow best in hydroponics?
For a first indoor crop, choose a leafy green or herb that fits your system and available light. “Best” depends on the equipment and growing conditions: a plant that works in a spacious media bed may be unsuitable for a narrow channel or countertop pod. University extension guidance identifies lettuce and herbs as common options, while larger fruiting plants are often associated with systems that provide more room.
Match the plant to the system
- NFT or DWC: Favor low-growing leafy greens and herbs. These systems are commonly used for salad greens and culinary herbs.
- Media systems: Consider larger crops such as tomatoes, peppers, cucumbers, eggplant, strawberries or melons if the system can support their roots and above-ground growth.
- Countertop kits: Check the kit’s plant spacing and mature-size limits. A seedling’s small size does not indicate how much room the adult plant will need.
Check light before choosing a crop
Indoor light can be the limiting factor. A sunny window may support some lower-light leafy crops in summer, but supplemental lighting is needed for winter growing and high-light fruiting crops. UNH Extension explains indoor hydroponic light requirements in its Hydroponics at Home guidance; the University of Saskatchewan’s lettuce guidance provides leafy-crop context.

Allow for support and pollination
Vining or tall plants may need a trellis or other support. Indoors, fruiting plants may also need hand-pollination because natural pollinators are absent. UC Master Gardeners of Orange County discusses the pollination consideration in its hydroponics guidance.
How to choose and manage your first crop
- Measure the growing space. Check both the planting positions and the space available above and around them for mature leaves, stems, roots and fruit.
- Choose a crop for the light you have. If you are growing in winter or want a fruiting crop, plan on suitable supplemental lighting rather than assuming a window is enough.
- Follow the seed packet’s spacing. Do not crowd plants because seedlings look small. UMN Extension advises using crop-appropriate spacing and considering eventual plant size.
- Use crop-appropriate nutrient and pH guidance. Hydroponics delivers nutrients through water, but different plants do not necessarily share identical needs. UMN gives a general pH range of 5.4–7 for plants in water; use crop-specific guidance where available instead of treating that broad range as a target for every crop.
- Plan support and pollination for fruiting plants. Set up support for climbing or tall crops, and be ready to hand-pollinate indoor flowers if needed.
For plant size, pH, spacing and lighting considerations, consult UMN Extension’s small-scale hydroponics guide. For nutrient delivery and general light planning, see UNH Extension’s home hydroponics resource.

What crop rankings can—and cannot—tell you
There is no universal ranking of the 21 plants for home gardens. UF/IFAS reports a Florida production order based on the latest published data described in its article: herbs, peppers, cucumbers, tomatoes, lettuce, mixed vegetable and herb production, then strawberries. That is a geographically specific production ranking, not a guide to what will thrive in a particular home system. UF/IFAS Extension’s Hydroponic Vegetable Production in Florida provides that context.
