The Science of (and Guide To) At-Home Carbonation

A practical, safety-first guide to making sparkling water at home: the role of pressure and temperature, carbonation volumes, soda makers, siphons, compatibility and troubleshooting.

At-home carbonation is the controlled dissolution of carbon dioxide (CO₂) in a liquid. Pressure drives CO₂ into the drink, while colder liquid holds more of it. For a countertop sparkling-water maker, start with plain water chilled to 39–44°F (4–7°C), carbonate only within the appliance’s instructions, and add fruit or flavor afterward. A soda siphon can serve the same basic purpose, but its gas, fill volume, charger count, temperature range and pressure limits are model-specific.

How carbonation works

When CO₂ contacts a liquid under pressure, some gas dissolves rather than remaining above the surface. The dissolved amount depends mainly on CO₂ pressure and temperature; sugar and alcohol also affect the result. At the same pressure, colder water absorbs more CO₂ than warm water.

Opening the vessel drops the pressure toward atmospheric pressure. CO₂ then leaves the liquid until it approaches a new equilibrium, which is why an opened drink gradually goes flat. Agitation can speed gas transfer in equipment designed for forced carbonation, but it does not replace the manufacturer’s rated procedure.

Understanding carbonation volumes

“Volumes” means the volume of CO₂ gas dissolved per volume of beverage. One volume is approximately 1.96 grams of CO₂ per liter, according to the University of Florida IFAS Extension guide A Guide to Carbonating Beverages at Small Scale. About 0.6 volumes is the minimum level people can generally detect. Many soft drinks are around 3–3.5 volumes.

The same guide describes 8 volumes as an absolute maximum general level because higher carbonation can produce excessive bite and a pressure hazard. That figure is not a target for home equipment: the appliance, bottle or siphon rating always takes priority. Its idealized water table gives approximately 3.23 volumes at 5°C and 20 psig, and 5.09 volumes at 5°C and 40 psig. Those values assume water and pure CO₂ and are not consumer-machine setting recommendations.

Choosing a home carbonation method

Method How it works Best suited to Important limits
Countertop sparkling-water maker Injects CO₂ from a cylinder into a manufacturer-approved bottle. Frequent, quick batches of plain sparkling water. Use only the bottle, liquid type and CO₂ format approved for the exact model.
CO₂ soda siphon Pressurizes a serving vessel with a charger. Small batches served directly from a refillable siphon. Gas, charger quantity, fill level, pressure and temperature are model-specific.
Fermentation-based bottle carbonation Yeast generates CO₂ in a sealed beverage during maturation. Traditional sparkling-wine and other deliberately fermented processes. Requires additional ingredients, temperature control, pressure management and substantially more time.

The IFAS guide distinguishes rapid forced carbonation from fermentation-based bottle methods. For household use, follow the equipment manual rather than transferring commercial or small-producer pressure examples to a consumer appliance.

How to carbonate water in a countertop machine

  1. Chill the water. Refrigerate plain water to 39–44°F (4–7°C), the range recommended by SodaStream for its sparkling-water maker product family. Colder water generally retains more CO₂ at a given pressure.
  2. Check the bottle and cylinder. Confirm that the bottle is within its use date if one is specified, is undamaged, and locks into the machine correctly. Install the cylinder format listed for your model.
  3. Fill only to the marked line. Leave the required headspace; overfilling can force liquid into valves and increase the chance of a pressure problem.
  4. Carbonate according to the manual. Use the machine’s prescribed button presses or duration. SodaStream notes that the machine’s puffing noises do not indicate a measured carbonation level, so do not treat sound as a universal gauge.
  5. Release pressure as directed. Remove the bottle only after the machine’s release or removal sequence is complete.
  6. Flavor after carbonation. SodaStream recommends adding fruit or flavor after carbonating. Pour slowly and add flavor gradually to limit foaming.

Using a soda siphon safely

A siphon is a pressure vessel, not simply a bottle with a nozzle. Read its plate, manual and charger instructions before filling. For Kayser’s SODAsiphon STANDARD, the manufacturer lists a 1.0 L fill volume, 20 bar operating pressure, CO₂ as the permitted operating gas, a permitted temperature range of +1°C to 30°C, and a maximum of one Kayser charger. Kayser also specifies use of only its soda chargers with this siphon.

  • Use the specified CO₂ charger and connector; do not assume chargers or cylinders are interchangeable.
  • Stay below the marked fill level and within the stated temperature and pressure range.
  • Inspect seals, threads, nozzle and vessel for damage before pressurizing.
  • Keep the siphon upright while operating and release pressure only through its intended mechanism.
  • Stop using it if it leaks, deforms, has damaged threads or cannot depressurize normally.

Can you carbonate juice, soda or other liquids?

Only if the exact manufacturer manual says the appliance is designed for that liquid. SodaStream’s safety guidance warns that liquids other than water can contaminate or clog components, create excessive pressure and contribute to bottle failure; the regional warning is available at SodaStream support. Foamy, sugary, pulpy or alcoholic liquids can behave differently from water and may be difficult to clean from valves. When the manual permits flavoring, carbonate water first and add the flavor afterward, as described in SodaStream’s current support instructions.

Equipment and compatibility checklist

  • Intended liquid: water-only or expressly approved alternatives.
  • Vessel: the correct bottle or siphon, fill line and replacement schedule.
  • Pressure control: the machine’s operating procedure or the siphon’s rated pressure.
  • CO₂ supply: the specified cylinder valve, charger type and connector.
  • Capacity: usable fill volume, not the vessel’s total outside dimensions.
  • Cleaning: removable parts, approved detergents and drying instructions.
  • Warnings: maximum temperature, charger count and any restrictions on liquids.

CO₂ cylinders and chargers are device-specific consumables. Verify the connector and charger compatibility before purchase; a physically similar cartridge is not evidence that it is safe or approved.

Troubleshooting weak or short-lived fizz

The water is barely carbonated

  • Chill the water to the manufacturer’s recommended range before trying again.
  • Check that the bottle is filled only to its line and is fully seated.
  • Confirm that the cylinder or charger is not empty and is the specified format.
  • Use the prescribed carbonation cycle rather than counting sounds or guessing from another machine.

The drink foams excessively

  • Stop and follow the pressure-release procedure; do not force the bottle or siphon loose.
  • Check for overfilling, warm liquid or an unapproved flavored liquid.
  • Inspect seals and valves for contamination or damage before reuse.

The fizz disappears quickly

Warm liquid, a loose closure, repeated opening and agitation all allow CO₂ to escape more rapidly. Keep the drink cold, close it promptly and pour gently. Never exceed the vessel’s rating to compensate for a short shelf life.

Pressure and temperature safety

Carbonation equipment stores energy in a pressurized vessel. Never overfill, exceed a stated pressure or temperature limit, substitute an unapproved gas, or use a damaged bottle or siphon. The IFAS guide warns that excessive carbonation can create a pressure hazard, while SodaStream warns that misuse with other liquids can lead to excessive pressure and bottle failure. Manufacturer limits for the actual model override general carbonation figures.
