The Microwave Mishap: What Happens When You Microwave Bread?

Microwaved bread can feel soft at first and turn tough as it cools. Here’s what happens to the crumb and which heating method better suits crisp bread.

Microwaved bread may feel warm and soft at first, then turn tough as it cools. Heat and steam change the crumb, and internal boiling during microwave reheating has been linked to pronounced toughening in bread-like products. Because a microwave does not form the crust associated with conventional heating, it is a poor choice when you want crisp bread.

Why microwaved bread can turn tough

Microwave heating can generate steam within bread. That may briefly soften the crumb, but the outcome depends on the bread’s moisture and composition, as well as the heating conditions.

In a 2007 study of bread-like products, the authors found that microwave-reheated samples became considerably tougher when internal boiling was induced. They reported that moisture loss alone had a relatively minor toughening effect. The finding points to internal boiling—not simply the idea that the bread dried out—as an important condition in the products studied. Read the study abstract.

Why it can harden as it cools

The texture can change quickly after heating. The 2007 study reports rapid phase changes in amylose during cooling, with toughening apparent soon after heating. A separate 1993 study record on microwave-treated white bread describes starch retrogradation as a contributor to gradual hardening after the rapid initial hardening associated with microwave treatment. So a soft or chewy bite straight from the microwave and a tough bite shortly afterward are compatible stages of a changing crumb. The cited findings describe particular products and conditions; they do not mean every loaf or slice will harden every time.

Microwave, toaster, or oven: choose by texture

How to warm bread in a microwave

  • Heat briefly, then check the bread rather than relying on a universal time. The available studies do not establish one duration that works across ovens, slice thicknesses, and bread types.
  • If you want a crisp surface, use a toaster or conventional oven instead; microwave reheating does not create the same crust.
  • USDA FSIS general microwave guidance recommends covering food with a lid or microwave-safe plastic wrap to retain moisture and support even heating, and allowing standing time after heating. What the evidence does—and does not—show

A 2012 review describes microwave reheating as lacking crust formation and causing severe toughening in flour- and starch-based products. The bread-like-product study identifies internal boiling as a condition associated with toughening, while the white-bread study record discusses starch changes during hardening. Together, these sources explain why microwave-warmed bread may become tough, but they do not establish a universal outcome or time threshold for all bread. 2012 review; 2007 study; 1993 study record.
