Set your refrigerator to keep food at 40°F (4°C) or below. That is the food-safety ceiling recommended by USDA Food Safety and Inspection Service (FSIS) and FoodSafety.gov—not a requirement to set every fridge to exactly 40°F. Verify the actual temperature with an appliance thermometer; a dial or display alone may not tell you what the food is experiencing.
Why 40°F is the limit
USDA FSIS describes 40–140°F as the temperature “danger zone,” where bacteria grow most rapidly. Some bacteria can double in as little as 20 minutes in that range, though that rate does not apply to every pathogen or food. Refrigeration slows microbial growth; it does not sterilize food or keep it safe indefinitely. Listeria, for example, can multiply in a refrigerator over time. FoodSafety.gov’s cold-storage chart assumes a refrigerator at 40°F or below, but still sets different storage times for different foods. For instance, it lists raw ground meat for 1–2 days and cooked meat or poultry leftovers for 3–4 days. A sufficiently cold fridge does not extend those recommended periods. How to check your refrigerator temperature
Use an appliance thermometer designed for refrigerator temperatures. USDA FSIS recommends a water-based check because refrigerator air temperature can fluctuate as the door opens and the cooling cycle runs. Its checking range is 38–40°F; this is a practical reading range, not a claim that 38–40°F is a universally proven optimum.

- Place the thermometer in a glass of water in the middle of the refrigerator.
- Wait 5–8 hours before reading it.
- If the reading is outside 38–40°F, adjust the refrigerator control according to the owner’s manual.
- Allow the unit time to respond, then check again using the same method. The thermometer can remain in the refrigerator for ongoing monitoring.
These are USDA FSIS’s instructions in its appliance thermometer guidance. If the temperature remains above 40°F after an adjustment and adequate time, the fridge may have a performance problem; the cited guidance does not identify a specific repair or diagnosis.
What to do if the fridge is too warm or the power goes out
- Perishables above 40°F for more than two hours: USDA FSIS says to discard them. Do not taste food to test it. Harmful pathogens may not change its smell, taste, or appearance. See FSIS refrigeration guidance.
- During a power outage: Keep the refrigerator door closed. An unopened refrigerator generally keeps food safely cold for about four hours, according to USDA FSIS emergency guidance.
- After shopping or cooking: Refrigerate perishables within two hours, or within one hour when the ambient temperature is above 90°F. FDA household food-safety guidance covers prompt refrigeration; USDA food-safety basics provide the one-hour hot-weather limit.
Should you trust the fridge display?
A built-in display or control is convenient, but an appliance thermometer offers an independent check of the temperature where food is stored. Follow the thermometer’s placement instructions and allow the specified time for a meaningful reading. USDA recommends the thermometer category, not a particular brand or model.
