The 9 Best Containers for Sourdough Starter: Jars, Crocks, and More

A wide-mouth quart jar suits many modest starters, but a larger container may offer more overflow room. Compare nine practical styles and learn how capacity, visibility, and lid use affect the choice.

The best container for sourdough starter is one that gives it room to rise, is easy to feed and clean, and can be covered appropriately for fermentation or storage. A wide-mouth quart jar is a sensible default for a modest amount; a larger food-safe container gives more headroom, while a purpose-built crock offers useful design features but is optional. The nine choices below are practical container styles and use cases—not a tested product ranking.

How to choose a container for sourdough starter

  • Allow for growth: King Arthur Baking recommends a lidded container large enough to hold three times the starter’s volume. This is practical sizing guidance, not a guarantee against overflow; the amount of starter you retain and feed affects how much space it needs. King Arthur Baking’s storage guidance
  • Choose an easy-to-use opening: A wide mouth makes it easier to add flour and water, stir, scrape down the sides, and clean the vessel. Bob’s Red Mill specifically prefers clear glass with a wide mouth. Bob’s Red Mill equipment guidance

  • Match the cover to the stage: During room-temperature fermentation, cover loosely rather than sealing in gas. Clean, food-safe vessels made of glass, plastic, or ceramic are options in Bob’s Red Mill’s guidance. King Arthur Baking also lists stoneware, stainless steel, and enameled metal as suitable. The cited guidance does not establish one material as a controlled-test winner.

Nine practical container choices

1. Wide-mouth quart canning jar

A straightforward choice for a modest starter quantity: it is easy to find, transparent, and its wide opening helps with feeding and stirring. Colorado State University Extension describes wide-mouth quart canning jars as popular for starter. Check that your retained starter and feeding volume can rise without reaching the rim.

2. Two-quart restaurant-style food-storage container

Choose this when you keep more starter or want extra room above it. Colorado State University Extension says larger, two-quart restaurant-type containers may help minimize messy overflow. The tradeoff is that a larger vessel takes more shelf or counter space.

3. Purpose-built sourdough crock

A sourdough crock can combine a wide mouth, room for a growing starter, and a loose-fitting lid. King Arthur Baking describes glazed ceramic crocks and a marked glass example. These features can make a crock convenient, but the source does not establish that a specialty crock improves starter performance over an appropriately sized ordinary container.

4. Clear wide-mouth glass jar in another size

If a quart jar is too small or too large for your routine, a different-size clear glass jar keeps the visibility and accessible opening. Choose capacity based on the amount you maintain and leave ample room for rise; King Arthur Baking’s guidance is to allow space for triple the starter’s volume.

Ceramic and stoneware are suitable choices in the cited baking guidance. They are worth considering if you already own a clean, food-safe vessel with enough capacity and a usable opening. An opaque vessel makes it harder to see growth directly, so mark the starter’s starting level if tracking its rise is important to you.

King Arthur Baking lists stainless steel among suitable materials. It can work when the vessel is clean, food-safe, roomy enough, and easy to access. Because metal is opaque, it does not provide the at-a-glance rise monitoring of clear glass or translucent plastic.

8. Enameled-metal container

King Arthur Baking also names enameled metal as suitable. The enamel makes the interior surface distinct from bare metal, but the practical criteria remain the same: adequate headroom, a manageable opening, and a cover suited to the starter’s storage stage.

9. A clean container you already own

You may not need to buy anything. A clean, food-safe glass, plastic, or ceramic vessel can be adequate if it holds your starter with room to expand, lets you stir and clean it without difficulty, and can be covered appropriately. A specialty container is a convenience, not a requirement.

How to cover the container

Starter produces gas while fermenting, so an airtight lid during active room-temperature fermentation can allow pressure to build. King Arthur Baking cautions against an airtight lid for that stage. Colorado State University Extension distinguishes room-temperature fermentation from refrigerator storage: cover loosely while fermenting, then cover tightly in the refrigerator after the starter has risen and collapsed. Follow the storage method that fits your feeding routine rather than treating one lid position as right for every stage.
