A paring knife is a short, narrow knife used mainly in the hand rather than on a cutting board. It handles peeling, hulling strawberries, coring, citrus work, mincing shallots and deveining shrimp.

How the knives were tested
Epicurious held and weighed 22 knives, then tested hulling strawberries, peeling apples and cutting hard cheese. It judged tip sharpness, handle-to-blade balance and overall control. Reviewed tested 10 knives measuring 3 to 4 inches by peeling apples, segmenting oranges, mincing shallots and deveining shrimp, scoring sharpness, comfort, control and balance. Food Network’s review compared performance on vegetables, tomatoes, strawberries, citrus and shallots. These different tasks explain why the publications selected different winners.

Wüsthof Classic 3.5-inch: best premium all-rounder
Reviewed found the Classic exceptionally balanced, sharp and easy to maneuver. It peeled apples, segmented oranges, peeled produce and deveined shrimp effectively. The 3.5-inch blade sits in the middle of the usual 3-to-4-inch range, giving more reach than a 3-inch knife without feeling unwieldy. Choose it when one well-made knife must cover the widest range of hand-held prep.
Victorinox 3.25-inch straight edge: best value
This lightweight knife was sharp and performed especially well coring strawberries and peeling apples. Reviewed called it an exception to the usual “you get what you pay for” expectation, while noting lower durability than the premium Wüsthof. It is the sensible first purchase when low cost and easy control matter more than maximum service life.

MAC Paring Knife: best sharpenable premium alternative
Epicurious selected the MAC as its overall winner from 22 knives. Its carbon-steel blade was sharp and well balanced, gliding through strawberries, cheese and apple peels. The key advantage is maintenance: you can restore the edge with a whetstone or knife sharpener. Buy it if you are willing to sharpen regularly and want a premium knife that is not treated as disposable.
Kuhn Rikon 4-inch set: best for value and protected storage
The set contains three 4-inch stainless-steel knives, each with a sheath. Food Network found them sharp on vegetables, tomatoes and strawberries, with secure ergonomic handles and a nonstick coating. Insert each blade carefully into its sheath; forcing or misaligning it can expose your fingers to the edge. This set makes sense for households that need multiple knives and do not have a block or magnetic strip.

Wüsthof Gourmet 3-inch spear point: best for delicate precision
Epicurious favored the Gourmet’s narrow, lightweight blade and very pointed tip for hulling strawberries, scoring fish and other small cuts. The same review considered the MAC and Zyliss better general-purpose choices, so select this model for tip control rather than broad versatility. A 3-inch blade gives the closest, most controlled feel around small produce.
Shun Classic 3.5-inch: best splurge
Food Network praised the Shun’s layered stainless blade, balanced feel and moisture-resistant Pakkawood handle. It peeled produce and cut citrus and shallots well. Its tip was less sharp for hulling than some competitors, and the knife should be hand-washed. It is a premium choice for users who value materials, finish and balance and will follow careful maintenance.

Choosing the right blade length
Food Network describes 3 to 4 inches as the typical paring-knife range. Use the following rule:
- 3 inches: maximum control for hulling, intricate trimming and small fruit.
- 3.25 to 3.5 inches: the most useful middle ground for mixed tasks.
- 4 inches: more reach across larger apples, tomatoes and other produce.
Blade length is only part of control. A light handle and a balance point that does not pull the knife forward reduce fatigue during repetitive peeling. Epicurious test-kitchen director Chris Morocco summarized the preference: “Any excess weight in the handle just makes it feel like it’s going to fall out of your hand. You want something light that allows you to sit there all day and peel, without feeling it.”

Care, storage and safety
Clean and dry promptly
Follow the manufacturer’s care label. Food Network notes that dishwasher guidance varies by knife and recommends drying knives promptly. The Shun Classic is specifically recommended for hand-washing.
Protect the blade
Store a paring knife in a block, on a magnetic strip or in a drawer with a fitted sheath. Never leave a loose blade in a drawer, where it can damage the edge or injure someone. When using the Kuhn Rikon set, guide each blade into its sheath carefully rather than pushing it in blindly.
Maintain the edge
Sharpen when the knife begins slipping through produce instead of biting cleanly. The MAC explicitly supports sharpening with a whetstone or knife sharpener; sharpening and durability information for the other models was not established in the cited tests, so use their makers’ instructions.
