For one knife that can handle most vegetable prep, Food & Wine names the MAC Professional 8-Inch Hollow Edge Chef’s Knife its best overall pick. Its review, updated April 3, 2026, praises the thin blade, light weight and secure grip, while noting it may need sharpening to deliver its best results. The other picks suit more specific needs, from a dedicated nakiri for vegetable work to a paring knife for detail.

How Food & Wine tested the knives

Food & Wine’s review compiles testing across multiple knife categories, covering well over 100 knives. That figure describes the publication’s compiled testing—not an industry-wide sample. The reviewers assessed design, weight, balance and handle comfort and security; checked sharpness with paper and an Edge-On-Up Professional Edge Tester; and tried knives on hard produce such as sweet potatoes and butternut squash, softer produce such as tomatoes and bell peppers, and herbs including scallions and basil. They also chopped garlic, shallot and onion, then compared retail prices. Different blade types were tested on different tasks, so the results are not a direct head-to-head trial in which every knife performed every task. Food & Wine’s review was updated April 3, 2026.

Chef’s knife: the most versatile starting point

A chef’s knife is the practical default if you want one blade for chopping onions, slicing vegetables and handling a range of produce. The MAC is Food & Wine’s overall choice; the Victorinox is its value pick, with the trade-off that it was less sharp in testing and demanded more effort on hard vegetables.

Santoku: a versatile alternative

A santoku also handles broad slicing and chopping. Food & Wine describes the Zwilling Pro as extremely sharp and well balanced, though food adhered to its blade. The New West KnifeWorks Teton Edge is the splurge option, praised for sharpness, handmade construction and design.

Nakiri: a dedicated vegetable blade

A nakiri’s flat, rectangular blade is designed for vegetable work. Food & Wine found the Made In Japanese Damascus Steel Nakiri handled most tested jobs well, but cutting through bell-pepper skin required extra back-and-forth movement. For a large, hard squash, the review recommends a sharp, weightier nakiri or a larger chef’s knife.

Paring knife: for small, precise jobs

A paring knife is suited to close, detailed work—peeling shallots, hulling strawberries or preparing citrus—rather than replacing a full-size knife for a pile of chopping. Food & Wine’s pick is the Global Classic Paring Knife, which it considers expensive for the category. A petty knife can fill the size gap between a paring knife and a chef’s knife.

Other produce and blade needs

A serrated bread knife can be useful for thick rinds. For any blade, sharpness matters: chef Cian O’Sullivan told Food & Wine, “It has to be sharp, or it won’t go through tomatoes.” That is a chef’s observation, not a guarantee that one particular knife will perform equally well for every cook or tomato.

How to choose between the picks

  • Match the blade to the work. Choose a chef’s knife or santoku for all-purpose prep, a nakiri for a vegetable-focused blade, or a paring knife for small, controlled tasks.
  • Consider produce size and firmness. Thin, agile blades can suit precise slicing; large or firm vegetables call for a sharp, weightier blade. A knife that is not sharp enough may require more force on hard produce.
  • Pay attention to how it feels. Weight, balance and a secure grip affect control and comfort over a longer prep session. Chef Mike Behmoiras told Food & Wine that the knife should feel right in your hand and be one you will use; a high price alone does not make a knife worthwhile.
  • Factor in care and steel. Food & Wine describes carbon steel as hard and capable of holding an edge, but prone to rust; stainless steel is more corrosion-resistant. Check the maker’s care instructions for the specific knife.
  • Choose within your budget. The Victorinox is the review’s value pick; the New West is its splurge. Recheck current retailer prices rather than relying on the review’s price snapshots.

Food & Wine does not declare one national style universally better. Its guidance frames Japanese knives as potentially lighter and suited to finesse, and German-style knives as generally thicker, heavier and more durable. Personal preference and the knife’s construction matter more than a blanket country-of-origin rule.

Use a stable grip and cutting surface

F.N. Sharp’s manufacturer-authored guide describes holding a knife with a pinch grip and curling the fingertips of the guiding hand into a “claw.” Stabilize round produce before slicing so it does not roll. Clean, dry and store blades carefully

Food & Wine advises hand-washing knives soon after use, drying them with a soft cloth and storing them so blades do not rub together. A magnetic strip or knife block can keep blades separated. In a Bon Appétit interview, chef Atsushi describes keeping his carbon-steel knife dry after use because it can rust; that is his individual example, not a universal care specification for every knife.
