What a proofing basket does
A proofing basket—also called a banneton or brotform—supports shaped dough during its final rise. Without support, a high-hydration or naturally leavened loaf can relax outward rather than remaining tall. The basket helps preserve the intended shape until you turn the dough onto a baking stone, steel, sheet, or other baking surface.
A basket can also affect the loaf’s exterior. An unlined rattan basket may leave a spiral pattern, while a liner generally produces a smoother surface and can make transfer less stressful. The basket itself is not a baking pan: do not put a banneton in the oven unless its manufacturer explicitly says that it is oven-safe. Brod & Taylor, for example, states that its bannetons are for proofing and cannot be baked directly.

- BAKE TWO LOAVES AT A TIME: Includes two 9-inch round baskets for proofing multiple loaves at once. A highly efficient proofing basket for creating the classic sourdough boule shape, for a more productive baking.
- SPLINTER-FREE FINISH: Made of premium Indonesian Rattan with a smooth, polished finish. This ensures a safe, clean release, making it one of your most reliable sourdough accessories and baking essentials.
- YOUR SMART BAKING COMPANION: Get exclusive access to the BakeSide App. This AI assistant provides guidance from starter photo analysis to bake scheduling, a core part of your new sourdough kit.
- PROOF, BAKE, & SERVE: Beyond proofing, these beautifully handcrafted bowls double as an elegant bread basket for your kitchen table. A versatile addition to your bread making accessories for serving fresh rolls.
- EFFORTLESS CLEANUP: The smooth interior prevents stuck-on dough, making this sourdough basket simple to clean after each bread proofing session. Just tap out the excess flour and store.
You do not have to buy one. A colander or bowl lined with a clean, lint-free towel and dusted thoroughly with flour can support dough in much the same way. A purpose-built basket is more predictable in shape and often easier to size correctly, but it is an aid—not a requirement for making good bread.

1. Breadtopia Round Rattan Proofing Basket: best traditional round basket
The Breadtopia round rattan basket is the strongest all-purpose traditional pick for bakers who mainly make boules. Breadtopia lists an 8.5-inch inside diameter, approximately 3.5-inch inside height, and an approximate dough range of 680–1,130 grams. That range covers many home sourdough formulas, although the correct fit depends on the dough’s flour blend, hydration, and additions.
Its main advantage is flexibility: it can be used with the compatible liner for a smoother loaf or without one for the familiar spiral pattern. America’s Test Kitchen previously identified Breadtopia’s round and oval bannetons and corresponding liners as favorites in its comparison. That is useful supporting evidence, but it is older independent testing—not a test performed for this article and not a guarantee that every dough will release cleanly.
Rattan requires more care than a washable composite. Brush out excess flour, follow the seller’s cleaning guidance, and let the basket dry completely before storing it. A few retailer reviews also report rough construction or cracking, so inspect the basket when it arrives for splinters, broken strands, or uneven edges.
Choose it if: you want a classic boule shape, natural rattan, and the option of using a liner or going liner-free.

Skip it if: you need a basket that can be routinely rinsed or washed, or if you primarily bake oval bâtards.
2. Breadtopia Banneton Oval: best washable composite option
Breadtopia’s oval banneton is designed for elongated bâtards rather than round boules. It is made in the United States from a composite described as 30% recycled maple wood fiber and 70% food-safe, BPA- and phthalate-free polypropylene. The material makes this a practical alternative for bakers who like an oval loaf but are concerned about rattan’s drying requirements.
According to Breadtopia’s care guidance, the composite can be rinsed and washed, including in a dishwasher, unlike a natural rattan basket that needs more careful handling and thorough drying. That is particularly useful in a humid kitchen or for anyone who wants to remove sticky dough residue rather than simply brush away flour.
Do not interpret “washable” as “guaranteed nonstick.” Customer feedback includes both successful-release reports and complaints that the basket needed oil and flour or still stuck with certain doughs. Release depends on preparation, dough hydration, proofing time, and the condition of the dough—not just the basket material.
Choose it if: you bake bâtards and prioritize easy cleaning, especially in a humid environment.

Skip it if: you specifically want the natural spiral texture and traditional feel of rattan.
3. Brod & Taylor Banneton: best stackable modern design
Brod & Taylor makes boule and batard bannetons from upcycled sugarcane pulp and renewable bamboo. The listed boule dimensions are 8.5 by 3 inches; the batard is listed at 10 by 5 by 3 inches. Stated capacities are approximately 850 grams to 1 kilogram for the boule and 700–850 grams for the batard.
The design is especially appealing if your baking equipment competes for cabinet space. The baskets are intended to nest or stack, and fitted 100% linen liners are sold separately. The company describes the material as supporting release, moisture absorption, durability, and stackability; those are manufacturer claims rather than independently verified performance results.
As with every basket here, match the shape to the loaf you intend to make. Also remember that a capacity printed on a product page is approximate. A dough containing whole-grain flour, seeds, nuts, or other inclusions may need more room than a plain white-flour dough at the same nominal weight.
Choose it if: you want lightweight equipment that stores efficiently and prefer a modern alternative to rattan.
Skip it if: you need a basket that can be baked directly or want to avoid buying a separate liner.
4. King Arthur Baking Round Bannetons, Set of 2: best for two round loaves
King Arthur Baking’s set contains two round bannetons sized for approximately 2-pound dough portions. The value here is workflow rather than a claim of superior release: you can proof two loaves at the same time, keep one basket available while the other is drying, or bake successive loaves without reshaping your process around a single vessel.

It is not the right shape for someone whose standard loaf is a bâtard; a round basket will encourage a rounder dough profile.
King Arthur Baking’s general guidance is that both lined and unlined baskets can work when floured thoroughly and evenly. Rice flour is commonly used because it tends to remain dry on the dough’s surface and can improve release, but no dusting flour eliminates every sticking problem.

5. Superbaking Proofing Basket Set: best beginner bundle
The Superbaking set is aimed at a new sourdough baker who needs more than a basket. The listed bundle includes an Indonesian rattan proofing basket, washable liner, starter jar, silicone sling, whisk, lames, printed guide, and access to the company’s baking app. The product page states that the basket supports loaves up to 1.5 pounds and listed the price at $31.97 when this research was conducted.
This is a convenience recommendation, not a finding that its basket outperforms the standalone options. It can be a sensible way to assemble basic equipment in one purchase, particularly if you do not already own a jar, lame, whisk, or sling. An experienced baker who has those tools may get better value from buying a basket alone.
Because it uses rattan, follow the same drying precautions as with other natural-fiber baskets. Confirm the current price and exactly what is included before ordering; bundle contents and promotional pricing can change.

How to choose the right basket
1. Start with loaf shape
- Round basket: for boules and other round loaves.
- Oval or batard basket: for elongated loaves that will usually be transferred to a similarly shaped baking surface.
Shape is not merely cosmetic. The basket supports the dough’s sides during the final rise, so choosing the wrong form can produce a loaf that does not match your scoring pattern or baking setup.

- "EXCELLENT CRAFTSMANSHIP: Beautiful handmade using natural rattan, absolutely free from dye and free from chemicals. Made with love and care by a small family business in Vietnam."
- "SPLINTER-FREE, SMOOTH AND NON-STICK: Carefully crafted to always expose smooth surface. With sufficient dusting, dough will easily stay in shape as well as slipping out smoothly onto baking surface."
- "EASY CLEANING: Use with the provided cloth liner, if desired. Without the liner, your banneton basket still does not need much cleaning. Simply shake the excess flour out after each use, and if dough has stuck to it, wait till it dries, then use a stiff brush to take it off."
- "9 INCH ACCOMMODATING SIZE: At 9 inch, it is the perfect size for baking a medium to large loaf."
- "TOP PERFORMANCE GUARANTEE: We guarantee the basket will perform exceedingly well and enable you to bake beautiful breads. If you feel it fell short of your expectation, simply return it for a refund."
2. Match capacity to total dough weight
Use the total dough weight—not the flour weight—when comparing capacity. For example, a formula with 700 grams of flour may produce substantially more than 700 grams of dough once water, starter, salt, and inclusions are added. Hydration, whole-grain flour, seeds, fruit, and nuts can also change how much room the dough needs.
Basket capacities are approximate, and manufacturers do not always describe them in exactly the same way. When your dough falls between sizes, consider the expected rise and whether you prefer a taller or broader loaf. Avoid filling a basket so aggressively that the dough reaches the rim before it is ready to turn out.
3. Decide between rattan and washable materials
Rattan is traditional, breathable, and capable of leaving a decorative spiral. Its trade-off is maintenance: flour and dough residue must be removed and the basket must dry fully before storage.
Composite or molded materials are generally easier to rinse and may be more convenient in damp conditions. They do not automatically release dough better. Flour, liners, dough hydration, fermentation, and proofing time still matter.
4. Choose lined or unlined proofing
A liner produces a smoother surface and can reduce direct contact between sticky dough and the basket. An unlined basket exposes the ridges or spiral and creates a more traditional pattern. Either approach can work; thorough, even flouring is more important than assuming one method is universally superior.
If sticking is your main concern, a linen banneton liner or a light coating of rice flour may be useful accessories. Treat both as aids, not guarantees. Overproofed or very wet dough can stick even when the basket has been prepared correctly.
How to use a proofing basket
- Prepare the basket. Brush out loose residue. If using a liner, fit it smoothly. Dust the liner or basket evenly, paying attention to the sides and bottom.
- Shape the dough. Build enough surface tension to help the dough hold its form, but avoid tearing the outer skin.
- Place the dough seam-side up. The seam will be underneath when you turn the dough out for baking. Follow your recipe if it specifies a different arrangement.
- Proof for the time and temperature your recipe calls for. The basket supports the dough; it does not determine when fermentation is complete.
- Turn it out decisively. Place the baking surface over the basket, invert the pair, and lift the basket away. Hesitation can allow the dough to drag and tear.
- Score and bake on the baking surface. The basket stays behind; it is not transferred to the oven.
Sticking, tearing, and other common problems
The dough sticks to the basket
- Flour the entire contact surface evenly rather than creating a heavy patch in one area.
- Try rice flour or a rice-flour blend for the next bake.
- Use a liner if you are working with unusually wet dough.
- Check whether the dough was overproofed; fragile, overproofed dough is more likely to collapse or tear during release.
- Do not assume oil is required. Some materials and manufacturer instructions may not call for it, and oil can change how flour adheres.
The dough spreads after turning out
Check the dough’s shaping tension, fermentation, hydration, and basket size. A basket can support dough, but it cannot compensate for weak gluten development or overproofing. A basket that is too large may also provide less side support than expected.
The basket smells damp or shows mold
Stop using it until it has been cleaned according to the manufacturer’s instructions and dried completely. Do not store a rattan basket, liner, or towel while damp, and do not rely on a claim that any basket is mold-proof. If visible mold remains or the material is compromised, replacement is safer than trying to salvage it.
The basket feels rough
Inspect natural rattan for splinters, cracked strands, and loose material before use. A rough or damaged basket can catch dough and may be unpleasant to handle. Contact the seller about a defective item rather than assuming rough construction is normal.

For rattan, remove loose flour and dried dough with a suitable brush and follow the manufacturer’s cleaning directions. Avoid putting natural rattan away immediately after use. Air circulation and complete drying are the key protections against damp odors and mold.
Composite baskets are usually more forgiving. Breadtopia says its composite bannetons can be rinsed and washed more aggressively, including in a dishwasher, but the product’s own instructions should take priority. Washable liners also need to dry fully before they are returned to a basket or cupboard.

The little lines made by the basket make your boule look like a beautiful round made by a professional bread baker.
A small banneton cleaning brush can help remove flour from rattan’s grooves, but it is optional; a clean, appropriate household brush may be sufficient. The important habit is removing residue without damaging the basket and allowing every part to dry before storage.
Do you need to buy one?
No. A clean bowl or colander lined with a lint-free kitchen towel is a workable substitute. Flour the towel thoroughly and evenly, use a shape that supports the dough, and make sure the towel does not shed fibers. This approach is especially sensible if you are still learning whether you enjoy baking sourdough.

What a proper comparison test would need to measure
Because this article does not claim in-house testing, readers should be cautious with any review that presents exact release or durability rankings without explaining its method. A fair comparison would use the same dough formula, dough weight, hydration, flour blend, proofing time, and dusting method wherever possible. It should test room-temperature and refrigerated proofing, record release failures, compare shape retention and surface pattern, measure cleanup and drying time, inspect for roughness or splinters, and document storage footprint and actual capacity.
Those tests should be repeated rather than treating one successful or unsuccessful release as conclusive. Dates, ambient conditions, photographs, dough weight, and failures should be recorded. Until that work is documented, product specifications and prior independent comparisons should be presented as supporting evidence—not as “our test” results.
Frequently Asked Questions
Do I really need a proofing basket?
No. A bowl or colander lined with a clean, lint-free, heavily floured towel is a workable substitute. A banneton offers more predictable dimensions and may create a decorative pattern, but it is not essential.
What size and shape proofing basket should I buy?
Use a round basket for boules and an oval or batard basket for elongated loaves. Match the stated capacity to total dough weight, including water, starter, salt, and inclusions—not just the flour weight.
Should I use a banneton liner?
A liner usually gives a smoother surface and may make release easier. An unlined basket can leave a traditional spiral pattern. Both can work when prepared with thorough, even flouring.
Can a proofing basket go in the oven?
Generally, no. Proofing baskets are designed to support dough during its final rise and are then removed before baking. Use one in the oven only if the manufacturer explicitly says it is oven-safe.
How do I prevent mold in a proofing basket?
Natural rattan must be brushed or cleaned according to the manufacturer’s directions and dried completely before storage. Composite baskets can generally be rinsed more thoroughly, but the product’s care instructions take priority.
