The word “cleaver” covers knives built for different jobs. Thin slicing cleavers

Dual-purpose cleavers
Leung Tim calls the middle-ground pattern a dual-purpose cleaver (文武刀). It is intended for everyday preparation and may handle some light-bone work, unlike a thin slicing knife. A hotel and catering textbook also describes a medium-weight “civil and military” cleaver as dual-purpose, distinct from the heaviest bone chopper. Heavy butcher’s cleavers
Heavier butcher’s patterns are designed for larger meat cuts and more substantial bone work. Choose a purpose-built model if breaking down meat or cutting bone is a regular task; a Chinese vegetable cleaver should not be treated as a substitute.
How to choose among vegetable cleavers
Match the blade to the work
For fine slicing and vegetable-heavy cooking, favor a thinner, lighter blade. A more substantial knife can provide greater chopping power but may feel tiring or wedge more in food. The CCK’s lightness and vegetable performance, compared with the Tojiro’s more robust build, illustrate that tradeoff in Bon Appétit’s review.

Consider steel and upkeep
Leung Tim says carbon steel can take a keen edge and is generally easy to sharpen, but can rust if left wet. Stainless steel is more rust resistant and convenient, though performance varies by steel. Choose based on the maintenance you will actually do rather than assuming every stainless knife behaves identically or every carbon-steel knife requires the same care.
Check the handle, balance, and cleaning
A comfortable grip and usable balance matter during repetitive prep. Also consider whether the handle is easy to clean and dry: Bon Appétit found the CCK comfortable but noted that its handle recesses take extra attention when drying. The Tojiro’s front-heavy balance is another reason to handle a knife in person if possible.

Most Chinese prep cleavers are not bone choppers. ZWILLING’s guidance and Leung Tim’s pattern descriptions distinguish vegetable or slicing knives from heavier knives intended for bone work. The Tojiro’s reported performance on bone-in chicken breast is a limited result from one review’s testing—not permission to chop dense bones, chicken-thigh bones, or large cuts with any Chinese cleaver. Use a heavier cleaver specifically designed for the job.

How to use and care for a Chinese cleaver
- Wash by hand and dry promptly. Do not leave the knife soaking. Leung Tim advises against putting traditional cleavers in a dishwasher.
- Protect carbon steel from moisture. A normal patina may develop. Orange or reddish rough material indicates rust and should be removed; Leung Tim recommends an extremely light coat of food-safe oil when needed, particularly for longer storage.
- Sharpen with suitable equipment. A whetstone is an option when sharpening is needed. Bon Appétit notes that the width of a cleaver blade can make some electric sharpeners unsuitable.
- Use the flat thoughtfully. The broad side can crush garlic or ginger and move chopped ingredients from board to pan, as described by ZWILLING and the Uttarakhand Open University text.
