Refrigerator Temperature: What It Should Be and How to Check

Set a household refrigerator to 40°F (4°C) or below, verify it with an appliance thermometer, and refrigerate perishable food within two hours.

Set your refrigerator to 40°F (4°C) or below and confirm the actual temperature with an appliance thermometer. If you mean food left out at room temperature, refrigerate perishable food within two hours—or within one hour when the surrounding temperature is above 90°F (32°C).

What temperature should a refrigerator be?

For household food safety, keep the refrigerator at 40°F (4°C) or below. FoodSafety.gov identifies 40°F (4°C) to 140°F (60°C) as the danger zone, where bacteria multiply quickly. The recommended freezer temperature is different: 0°F (-18°C) or below. FoodSafety.gov’s 4 Steps to Food Safety gives both targets.

How do you check the refrigerator’s temperature?

Use an appliance thermometer rather than relying only on the control setting or how cold the refrigerator feels. FoodSafety.gov recommends a thermometer to verify that the refrigerator is at or below 40°F (4°C). Follow the thermometer’s instructions for placement and reading. FoodSafety.gov also recommends appliance thermometers for monitoring during a power outage.

How long can perishable food stay at room temperature?

“Room temperature” does not have one fixed value that determines whether food is safe. The practical rule is to limit how long perishable food stays unrefrigerated: put it in the refrigerator within two hours, or within one hour if the surrounding temperature is above 90°F (32°C). These are the time limits in FoodSafety.gov’s food-safety guidance and its advice on maintaining food safety while cutting food waste.

What should you do if the power goes out?

Keep the refrigerator door closed to help it stay cold. FoodSafety.gov says a closed refrigerator can keep food safe for up to four hours without power. After that, use its food-specific power-outage chart to decide what to keep or discard. Do not taste food to judge whether it is safe.

This temperature and timing guidance reflects U.S. federal household food-safety recommendations. Follow product labels and applicable local guidance when they provide more specific handling instructions.
