For a good plancha sear, preheat the flat cooking plate, give food room to brown, and move thicker pieces to a cooler area or lower setting once a crust forms. The plate’s temperature controls searing; a food thermometer checks whether the center is safely cooked. Temperature ranges below are starting points from Planchaelec’s guide, not universal settings.

What is a plancha?

A plancha is a flat, heated plate that cooks food through direct contact. It can be a dedicated electric or gas appliance, or a plate placed over another heat source; you do not need a standalone outdoor cooker to use the technique. The flat surface makes it possible to sear foods such as steak, fish, seafood, and vegetables.

The plate may have hotter and cooler areas. The Michelin Guide describes searing over high heat, then moving food to a gentler area to keep it warm or finish cooking. A little oil and simple seasonings such as lemon or garlic can complement the food without obscuring its browning.

How to use a plancha

  1. Prepare the appliance according to its manual

Setup and first-use instructions vary by model. For example, the Schneider Consumer SCPL218B manual (published circa 2022) says to wash the griddle and grease tray in warm, soapy water, dry them thoroughly, then run the appliance empty for 10 minutes before first use. It notes that some smoke may occur and recommends ventilation. Treat these as instructions for that model, not for every plancha. Read the SCPL218B manual.

    • EASY CLEANING: The griddle grill cook top is fully immersible and dishwasher safe - simply remove the temperature control prior to washing.
    • CONVENTIENT COUNTERTOP COOKING: Quickly and conveniently add cooking space to your kitchen for large family dinners or holiday gatherings.
  2. Preheat the plate

Planchaelec recommends preheating for 5–10 minutes in its guide. Use your appliance’s manual and any built-in indicators to determine when it is ready; a different plate, heat source, or control can take a different amount of time. An inadequately heated plate may not sear effectively. See Planchaelec’s temperature guide.

  3. Choose a surface heat suited to the food

Planchaelec’s approximate surface-temperature guide gives 120–180°C for gentle heat, 180–250°C for medium heat, and above 250°C for high-heat searing. Its food-specific suggestions are 250–300°C for red-meat searing, 220–240°C for white meat, 150–200°C for thin fish fillets, and 180–220°C for vegetables. These are vendor recommendations, not regulated standards or guaranteed settings: plate design, food thickness, and temperature-control methods all affect results. Follow your appliance’s directions and adjust if food browns too quickly or too slowly.

  4. Sear, then finish more gently

Let the first side brown before moving or turning the food. Once it has a good sear, shift thicker pieces to a cooler part of the plate or reduce the heat so the center can finish without the outside scorching. Avoid crowding the cooking surface; space helps food brown more evenly.

  5. Check the center with a food thermometer

Surface heat and internal doneness are different measurements: a hot plate does not establish that the center of a piece of food is safely cooked. Use a food thermometer to check internal temperature. USDA FSIS guidance lists 145°F (62.8°C) plus a three-minute rest for whole cuts of beef, pork, veal, and lamb; 160°F (71.1°C) for ground meats; 165°F (73.9°C) for poultry; and 145°F (62.8°C) for fish and shellfish. Follow the applicable food-safety guidance where you live. Consult the USDA FSIS safe-temperature chart.

  6. Clean the plate as its manufacturer directs

Cleaning methods depend on the plate material and any coating. Check the manual before scraping or using abrasives, and avoid letting residue burn onto the plate. Planchaelec advises cleaning its plate before residue burns on; that guidance may not apply to every model. Use only tools and methods approved for your appliance. See Planchaelec’s care advice.

What to look for in a plancha

If you are choosing equipment, compare the features that affect how you cook and clean rather than assuming one format or surface is best. Electric and gas appliances, as well as plates used over an existing heat source, are all possible formats. Available features vary by model.

Feature Why it matters
Heat source and location Choose a format suited to where you will cook and the heat source available. Plancha formats include electric and gas appliances, and plates used over another heat source.
Cooking area and heat zones A usable cooler area makes it easier to sear food first and finish it more gently. Plate area and heat distribution vary by appliance.
Thermostat and indicators Adjustable thermostats and temperature indicators can help manage heat; selected Tefal models list adjustable thermostats. Features are model-specific. View Tefal plancha listings.
Plate and grease handling Check whether the plate is removable and how the appliance collects grease, then consider the cleaning directions and the effort they require. These details differ between products.
Manual and setup requirements Check model-specific instructions for first use, ventilation, compatible utensils, and care before cooking.

Common plancha mistakes to avoid

  • Starting before the plate is hot: Follow the appliance’s preheating instructions rather than relying on a single timing rule for all models.
  • Using high heat for the entire cook: A strong sear can be followed by gentler heat, particularly for thicker pieces.
  • Confusing plate temperature with doneness: Check the food’s interior with a food thermometer; an infrared or surface thermometer measures the plate, not the center of the food.
  • Using an unapproved scraper or abrasive: Check the manual because plate materials and coatings differ.
