The fungal decay that creates spalting can leave soft, punky spots that are a poor fit for a surface used for cutting. That practical concern is distinct from whether the fungus itself is toxic: a plant pathology professor quoted by WOOD Magazine says the commonly involved fungus is not toxic and its protein would be digested if ingested. That reported expert view is not a food-contact test or a blanket guarantee for every spalted maple object.
Why avoid spalted maple for a cutting board?
Spalting is associated with white rot fungus. In the context discussed by WOOD Magazine, the fungus most commonly involved is Hypoxylon deusta. Fungal decay can leave soft, punky areas in the wood, which is the magazine’s practical reason to avoid spalted maple for cutting boards.
A board needs a sound, hard surface that can withstand repeated knife contact and cleaning. The reviewed sources do not establish a test for certifying a spalted piece as suitable for cutting, so appearance alone cannot establish that a board is sound throughout.
Does that mean the fungus is poisonous?
Not according to the expert statement reported by WOOD Magazine. Tom Harrington, a plant pathology professor at Iowa State University, said of the fungal protein: “If you ingest it, it’s just going to get digested like all the other proteins that you eat.” His comment addresses ingestion of the fungal protein; it is not a regulatory approval of spalted maple for food contact and does not demonstrate that every finished object is safe.

The FDA explains that only certain molds and fungi produce mycotoxins of concern in foods. That general information does not establish that the fungus in any particular spalted maple piece produces a food-relevant toxin, or that a finished object transfers one to food. What about bowls, spoons, or platters?
Servingware is not the same use as a cutting board: it is not necessarily exposed to knife cuts that can encounter soft areas. WOOD Magazine reports Harrington’s view that the commonly involved fungus is not toxic, but the sources reviewed do not include direct food-contact trials of finished spalted maple bowls, spoons, or platters. They also do not establish whether all pieces contain the same fungus, whether a particular piece remains biologically active, or whether a given finish changes food-contact risk. Drying or sealing should not be treated as proof of safety.

What wood is a practical cutting-board alternative?
An Ask Extension response quotes Food Code language permitting hard maple or equivalently hard, close-grained wood for cutting boards and some utensils. Hard maple is therefore a supported alternative if you want a wood board and prefer to avoid the uncertainty around spalted wood. The Extension page does not establish the current requirements in every jurisdiction; commercial food operations should check the code adopted by their local authority.
Is woodworking dust a separate concern?
Yes. WOOD Magazine separately warns that sawdust from spalted wood may cause respiratory or skin reactions and recommends extra dust precautions, including a properly fitted dust mask. This is a maker-exposure issue; it is not evidence that food served on a finished piece is unsafe.

What can cleaning evidence tell you?
An FDA study summary on allergen removal includes maple wood surfaces and reports that surface material and texture affected cleaning and allergen transfer; full wash-rinse-sanitize-air-dry cleaning was effective in that study. This is useful context for food-contact surface cleaning, but it is not a test of spalted maple or a certification of any particular board.
