Compost them with dry, carbon-rich material, bury small amounts in a garden trench, or use a worm bin; then apply the finished compost as a soil amendment.
Why peels need to decompose before you use them
Fresh peels are organic material, not a measured, immediately available fertilizer. Their nutrient content varies with the scraps and how they break down, so there is no dependable N-P-K figure or universal application dose for a mixed batch of household peels. Composting turns scraps into a more stable soil amendment that adds organic matter and nutrients gradually.
The U.S. Environmental Protection Agency defines composting as “the managed, aerobic (oxygen-required) biological decomposition of organic materials by microorganisms.” Finished compost can improve soil structure and help soil retain nutrients and moisture. It supports gradual soil improvement, rather than guaranteeing an immediate feeding response or replacing a particular fertilizer for every crop. Choose a method that fits your space

How to compost peels in a backyard pile
EPA classifies fruit and vegetable scraps as nitrogen-rich “greens.” They need carbon-rich “browns,” such as dry leaves. EPA recommends at least two to three volumes of browns for each volume of greens. A pile can be built from available materials; a dedicated compost bin is optional.

- Start with browns. Put a coarse layer of dry leaves or other suitable brown material at the base of the pile.
- Add prepared scraps. Chop large or tough peels and vegetable pieces so they break down more quickly. Add them in a layer, then cover them with browns.
- Keep the balance. Aim for at least two to three volumes of browns per volume of green scraps. Continue layering as you add kitchen scraps.
- Manage moisture and air. The pile should be damp, not waterlogged, and aerated. Turn it to introduce air; add water if it is dry.
- Bury or cover food scraps. Keep scraps inside the pile under brown material to reduce animal access.
These steps follow EPA’s home composting instructions and its home composting guidance.
Troubleshoot a pile that smells or is not heating
- Bad odor: The pile may be too wet or short of air. Add dry browns and turn it.
- No heat after mixing: EPA recommends adding greens and turning the pile. Heat is not a guarantee that an ordinary home pile has destroyed every pathogen.
Know when compost is ready
A well-managed pile may be ready in about three to five months; an untended pile may take about a year. These are approximate times, not guarantees. Look for material that is dark, loose, crumbly, and earthy-smelling. After mixing, it should no longer heat up, and visible food scraps should be gone. Cure it for at least four weeks before use. EPA provides these timing and maturity indicators in its home composting guidance.

How to bury peels in a trench
For a small amount of scraps and an available garden area, dig a hole or trench, place the peels in it, and cover them with soil. Soil organisms decompose the material where it is buried. The University of Saskatchewan describes trench composting as a simple way to add fertility in place, but it does not yield finished compost you can move elsewhere. Do not use this method as a sanitation treatment for weed-seed-bearing or diseased plant material. UF/IFAS warns that weed seeds and plant pathogens in raw material may survive trench composting; see its in-garden composting guidance.

Use a worm bin for kitchen scraps
Vermicomposting can process kitchen scraps where a backyard pile is impractical. Iowa State University Extension lists vegetable scraps—including cores, peelings, rinds, leaves, stems, and roots—as suitable worm food. Bury food under the bedding, and use the finished vermicompost as a top dressing or for houseplants and outdoor plants. Follow Iowa State Extension’s worm composting guidance for setup and care.
Apply finished compost to garden soil
EPA’s general home-garden guidance offers two application approaches. Local soil and crop conditions may call for different practices.

- Mix it into a bed: Incorporate two to four inches of compost into the top six to nine inches of soil.
- Use it as a surface layer: Loosen the top two to three inches of soil, then apply a three-inch layer of compost. Keep it a few inches away from stems and trunks.
These are general EPA recommendations, not a crop-specific fertilizer prescription. Compost’s nutrient content depends on its feedstocks and production conditions, so no one application rate or fertilizer-replacement claim fits every garden.
