To sharpen a knife with a whetstone, secure the stone, prepare it according to its manufacturer’s directions, hold the blade at a consistent angle, and work from a coarser surface to a finer one if the stone offers both. Use light pressure and check for a burr—the thin edge of metal pushed over to the opposite side—before refining the edge. The right angle and preparation depend on the knife and stone, so there is no single soaking rule or angle that applies to every setup.
Before you start: check the knife and stone
Identify the knife’s edge type and the exact stone model. Follow their makers’ instructions where available; guidance differs across products. The routine below is for a conventional double-bevel knife, with special cases noted below.
- Double-bevel knives have bevels on both sides and are the usual case for the alternating-side method.
- Single-bevel knives need a different approach. KAI provides separate instructions for these blades; do not simply apply the same number of strokes to both sides. KAI Europe’s care instructions
- Micro-serrated edges, such as some bread knives, are not suited to the stone method described by Opinel. Use guidance intended for that edge type. Opinel’s stone-sharpening guide
Also check whether your stone is a waterstone, diamond stone, or another construction. Their wetting and maintenance requirements are not interchangeable.
Choose an angle and grit
Angle: follow the knife or stone maker’s guidance
Keep the blade at one steady angle through each stroke. Maker instructions illustrate why a universal angle would be misleading: WÜSTHOF specifies 14 degrees for its procedure; Work Sharp provides guides for 15 degrees for Eastern kitchen knives and 17 degrees for kitchen or folding knives; Opinel describes a 20-degree approach. Treat these as examples tied to their respective instructions, not competing universal standards.

If the knife maker gives an angle, use that. If not, choose a suitable angle based on the blade’s intended use and the stone’s guidance, then focus on holding it consistently. A changing angle can round the bevel rather than sharpen it cleanly.
Grit: start with the coarser side, then refine
When a stone has more than one grit, the general sequence in the cited maker instructions is coarse first and fine afterward. Work Sharp describes 1000 grit as medium for sharpening and 6000 grit as fine for refinement. WÜSTHOF recommends coarse then fine without specifying grit numbers on its guide. These examples do not establish one grit combination for every knife or degree of dullness; use the progression your stone supports and its manufacturer recommends.

Prepare and secure the stone
- Set up a stable surface. Place the stone on a non-slip base or a damp cloth on a steady worktop. WÜSTHOF specifies a flat, slip-resistant surface. Keep the work area clear and position the stone so it cannot slide while you sharpen.
- Prepare the stone exactly as directed. Do not assume every stone needs soaking. WÜSTHOF says to soak its stone for about ten minutes. KAI says its cited diamond stones do not need a pre-soak but should remain wet; its cited ceramic-bonded stones should be soaked until bubbles stop. Follow the instructions for your specific model. - Keep the surface in the condition its maker requires. Some water stones need water during sharpening. Work Sharp’s guide specifies water only for its whetstone. Do not add oil or another lubricant unless your stone’s instructions call for it.
Sharpen the edge, then remove the burr
- Place the blade at your chosen angle. Hold the handle securely and set the bevel against the stone. Use controlled movements that keep the angle steady. The cited instructions do not establish one stroke direction for every knife-and-stone pairing, so follow the method supplied with your stone where available.
- Work one side with light, even pressure. Move the edge across the stone in controlled strokes, covering the length of the blade rather than concentrating on one spot. Avoid pressing hard; Work Sharp and KAI both advise light pressure.
- Check for a burr. Continue sharpening until a small wire-like lip can be felt along the edge on the side opposite the one you have been working. Work Sharp uses this as the cue to move to the other side. Check carefully, moving a finger away from the edge rather than along it.
- Sharpen the other side. Repeat the process while keeping the same angle. On a double-bevel knife, work until a burr forms along the opposite side of the edge.
- Refine on a finer surface if available. Use light finishing strokes, alternating sides as directed by the stone’s instructions, to reduce and remove the burr. KAI notes that single-bevel blades require a separate procedure.
- Rinse and dry the knife. Follow the knife and stone makers’ cleanup instructions before using or storing the blade.
Clean and maintain the stone correctly
Care depends on the stone’s construction. KAI says to rinse and dry its cited diamond stones and store them away from sunlight; it warns that inadequate drying can lead to mold. KAI recommends flattening its cited ceramic-bonded stones, but says not to use a flattening stone to level its cited diamond stones. Check compatibility before using a flattening stone or plate—do not assume an accessory suits every whetstone. KAI Europe’s care guidance

Common mistakes to avoid
- Soaking every stone by default: preparation varies by construction and model.
- Changing angle during a stroke: a steady angle matters more than copying an example that may not match your knife.
- Using heavy pressure: use light, controlled strokes and let the abrasive surface do the work.
- Skipping the burr check: it is a useful sign that sharpening has reached the edge, rather than only polishing the bevel.
- Flattening without checking compatibility: some stones can be flattened; KAI specifically advises against flattening its cited diamond stones with a flattening stone.
- Using the double-bevel routine on every blade: single-bevel and micro-serrated knives may need a different method.
